Spiced Pumpkin Soup

Pumpkin is one of the healthiest and antioxidant-rich versatile superfoods. It is used in a variety of dishes. There are a lot of ways to include pumpkin in your diet. Like this Pumpkin pie, or pumpkin sabzi this pumpkin soup is another wonderful recipe to try with pumpkins.

Ingredients needed for pumpkin Soup

  • Pumpkin: Fresh winter pumpkin/squash or tinned pumpkin.
  • Herbs: Dried / fresh sage, basil, and parsley.
  • Onion and Garlic: Adds a nice flavor and texture to the soup.
  • Tomato: To balance the sweetness of the pumpkin.
  • Spices and Herbs: For flavorings.
  • Salt and Pepper: For seasoning.
  • Coriander leaves: To garnish and it also adds amazing flavor in the soup.
  • Cream: To serve

How to make Pumpkin Soup?

  1. Steam cook Pumpkin– First of all, wash, peel and roughly chop the pumpkin. Steam cook pumpkin with some water in a steamer or in a saucepan. Alternatively arrange them on a baking sheet, drizzle olive oil and sprinkle some salt. Preheat oven to 190 ° C and roast the pumpkin for about 50-60 minutes.
  2. Saute and Season- Finally, heat a pan and add oil. Now add onions and garlic and saute for a few minutes. Add tomatoes, herbs, and spices and saute for a minute. Add in the cooked pumpkin and some water. Cook for a few minutes and then blend with an immersion blender.
  3. Garnish and Serve– Garnish the soup with red chilly flakes, pumpkin seeds, cream, and coriander leaves. Serve warm and enjoy.

Serving Suggestions

Serve the warm soup with toasted bread, garlic bread or croutons.

Ingredients
  

  • 1 medium-size pumpkin cut into cubes
  • 1 to mato chopped
  • 1 onion chopped
  • 2-3 green chilies chopped
  • 3-4 cloves garlic
  • salt to taste
  • 1/4 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1 teaspoon red chili powder
  • 1 tablespoon olive oil

To garnish

  • Red chili flakes
  • Pumpkin seeds
  • Coriander leaves
  • Fresh cream

Instructions
 

  • Steam cook the pumpkin in a steamer.
  • Heat oil in a pan and sauté garlic and onions. Stir and add the tomatoes and chillies.
  • Cook until tomatoes are soft.
  • Now add salt, pepper, turmeric, coriander, cumin, red chilli powder. Mix well.
  • Add the steam cooked pumpkin and about a cup of water.
  • Cook for few minutes more or until your desired thickness.
  • Serve the soup warm topped with coriander leaves, pumpkin seeds, red chilli flakes and cream.

Notes

  • Instead of steam cook, you can also roast the pumpkin in the oven.
  • Roast the seeds of the pumpkin too, they make a very nice crunchy topping.
  • Adjust the seasoning as per your taste.
