Hong Kong Fried Rice

Hong Kong fried rice is very simple yet flavorful rice, make it with leftover boiled rice, and enjoy this amazing one-pot dish.

We are in yet another edition of BM#38 , and back with new month full of new themes and enthusiasm . Next month is going to be full month mega marathon and I am way to slow as haven’t cooked a single dish for that. I must have to work hard this month to remain in touch with the others in the group who have cooked almost dishes.


Coming back to this week , my theme is Gourmet with rice dishes ,and the first recipe is from a cookbook . I am fantasized by the name Hong Kong Fried Rice and hence tried it in my kitchen . It was something like fried rice but the addition of cashews and dried red chilly made it more delicious.

Make Fried Rice

  1. Stir fry veggies

    First of all, stir fry all of the vegetables until slightly soft but still crunchy. Add all the sauces, salt and pepper and the cooked rice. Finally, mix everything until combined.

Serving Suggestions

Serve this fried rice with Manchurian or Chilli Potato or Veg Man chow Soup.

Hong Kong Fried Rice

Equipment

  • Saucepan

Ingredients
  

  • 2 cups cooked rice
  • 1/2 cup french beans chopped
  • 1/2 cup carrot chopped
  • 1/2 cup capsicum chopped
  • 1 onion chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon red chilli sauce
  • 1/2 teaspoon peppercorn crushed
  • few cashew nuts chopped
  • 2 dried red chilly
  • 2 tablespoon cooking oil
  • salt to taste

Instructions
 

  • Heat oil in a wok . Add dried red chilly and cashew nuts in it.
  • Stir and add carrots, capsicum and beans . Let it cook on low heat for 4-5 minutes.
  • Add salt, mix, and add soy sauce and chili sauce .
  • Add cooked rice , stir and cook on high heat till combined well.
  • Sprinkle peppercorn and serve hot .
