Nylon khaman dhokla is a very popular Gujarati snack made with chickpea flour, it’s instant to make and taste absolutely delicious.
What is Khaman Dhokla?
Khaman dhokla is an instant snack made with steamed chickpea flour batter. Unlike the proper dhokla, it doesn’t need fermentation and soaking of grains.
Khaman dhokla can be eaten as a quick tea time snack or as a side dish/ breakfast recipe in the mornings.
Basic Ingredients for dhokla
So the basic ingredient that we need to make dhokla are
- medium-fine chickpea flour/gram flour/besan.
- Rava/semolina/Suzi- you can completely omit this as well.
- any one of tart thing-citric acid/Eno fruit salt/lemon juice/baking soda.
- yogurt- it’s completely optional.
- green chili and ginger
- salt and sugar

Khaman Dhokla
Equipment
- Steamer
- Cake tin
Ingredients
- 1 cup gram flour/besan
- 2 tablespoon semolina/Rava
- 2 tablespoon sugar
- 1 teaspoon ginger-green chili paste
- 1 teaspoon lemon juice
- 2 teaspoon Eno fruit salt
- salt to taste
To temper
- 2 teaspoon oil
- 1 teaspoon mustard seeds
- 2 teaspoon sesame seeds
- 2 green chili slits
- few curry leaves
- coriander leaves chopped
Instructions
- Combine besan , rava , ginger chilli paste,lemon juice and salt in a bowl.Add 3/4 cup of water slowly with continuous stirring to avoid lumps.
- Grease a tray or thali with oil, add no salt into the batter and mix. Immediately transfer the batter into greased tray.
- Steam in steamer for 15 minutes or till cooked.
- Heat oil in a pan and add all the ingredients to temper. Add 2 tablespoon of water and pour this tempering over dhoklas.
- Cool and cut into equal sizes , garnish with coriander leaves and serve.
Notes
- Make sure to whisk the batter in one direction.
- You may use citric acid or baking soda instead of eno fruit salt.
- Once the eno is added do not keep the batter for long.

khaman and dhokla is two different items. one is made with besan , other with rice. otherwise perfect khaman.
