gram flour/besan

semolina/Rava
2
tablespoon
sugar

teaspoon
ginger-green chili paste
1
teaspoon
lemon juice
2
teaspoon
Eno fruit salt
salt to taste
To temper
2
teaspoon
oil
1
teaspoon
mustard seeds
2
teaspoon
sesame seeds
2
green chili
slits
few curry leaves
coriander leaves
chopped
Instructions
Combine besan , rava , ginger chilli paste,lemon juice and salt in a bowl.Add 3/4 cup of water slowly with continuous stirring to avoid lumps.
Grease a tray or thali with oil, add no salt into the batter and mix. Immediately transfer the batter into greased tray.
Steam in steamer for 15 minutes or till cooked.
Heat oil in a pan and add all the ingredients to temper. Add 2 tablespoon of water and pour this tempering over dhoklas.
Cool and cut into equal sizes , garnish with coriander leaves and serve.
Notes
Make sure to whisk the batter in one direction.
You may use citric acid or baking soda instead of eno fruit salt.
Once the eno is added do not keep the batter for long.
