Falafel Pita Salad

This falafel pita salad makes a wonderful and filling lunch or dinner. Whenever I have leftovers falafels and pita bread, I love making this easy salad.

The best part is that this salad is very easy to put together and needs no extra hassle. Pair it with your favorite juice or smoothie and there you have got yourself a nice and filling meal ready to enjoy.

Ingredients Needed for Falafel Salad Bowl

  • First, Hummus-Classic hummus homemade or store-bought if you like, to make the dressing.
  • Falafel– Crispy deep-fried homemade falafels.
  • Salad-Cucumber, onion, tomato, and lettuce salad in a lemon vinaigrette dressing.
  • Pita bread- Leftover pita bread to make pita chips.

How to make the salad Bowl?

As I said earlier, it is pretty much easy to make the salad. When you have all the ingredients ready, all you need to do is assemble it.

So plan to make the salad a day before, I usually make it when I had falafel wraps a night before for dinner. Then I use the leftover falafel, pita bread, and hummus to make this salad bowl for our lunch.

You could do the same or make all the things ahead and simply assemble it. Keep the falafel, hummus dressing, and salad ready.

Finally, make the pita chips. Preheat oven to 200° C and line a baking tray with parchment paper. Cut the pita bread into a triangle or chips shape. Drizzle with olive oil, salt, and paper. Bake in preheated oven for 10-12 minutes or until slightly crispy.

Assemble the salad in a bowl or plate, add falafel, salad, and pita chips on a plate. Drizzle over hummus dressing, toss well and serve.

Serving Suggestions and Variations

Serve the salad right away, if you are planning to eat later then don’t assemble it. You could always freeze the falafel and pita bread in the freezer. Make sure to thaw and reheat them before using them again.

I have used classic hummus and the basic falafels to make this salad, you could also use a variety of hummus and falafels.
