The pronunciation means spaghetti with garlic and oil. This spaghetti Aglio e olio is one of the classic Italian pasta dishes from Naples, this dish is made with sauteing minced garlic in extra virgin olive oil.
Then toss the pasta in it finally garnishing with loads of chopped parsley. Sometimes grated Parmesan is also added but in traditional recipes, there is no mention of it.
I find it one of the easiest yet flavorful pasta dish. I just love it and always make it whenever not in the mood to make any kind of pasta sauces be it red or white.
This is one of the simplest yet delicious pasta dish ever. The strong and pungent garlic, the mildly bitter flavors of parsley along with sharp extra virgin olive oil, it’s just amalgamation of flavors in one dish.

Spaghetti Aglio e olio always reminds me of the one scene from the movie Chef, when chef Carl cooks this pasta for the gorgeous Scarlet Johansson…the cinematography is just mesmerizing 😍Anyone who loves food can relate the depth of this scene.
What you’ll need o make aglio e olio
- Spaghetti: Spaghetti is used to make Aglio e olio but you could use any of your pasta noodles like linguine or angel hair pasta.
- Garlic: Garlic is one ingredient that adds the flavors and tastes into the Aglio e olio.
- Parsley: Loads of freshly chopped parsley to bring out the flavors in pasta, although we need fresh parsley but you could use dried too.
- Extra Virgin Olive Oil: Extra virgin olive oil makes the pasta more flavorful, I have never used any other oil to make any kinds of pasta.
- Salt and Pepper: To season
How to make Spaghetti Aglio e olio
As I mentioned above, this is one of the easiest pasta dishes ever. All you need to do is cook spaghetti as per package instructions or until al dente (cooked as until firm when bitten). Heat up olive oil and saute garlic in it. Toss the cooked spaghetti in the garlic and olive oil. Add chopped parsley, salt, and pepper and voila it is ready to serve.
Serving Suggestions and Variations
Serve the spaghetti Aglio e olio with your favorite red or white wine, Sangria, or any other cocktail, mocktails, etc.. You could also pair it with juices as well.
For variations you can add some grated Parmesan cheese or Pecorino cheese.
Pro Tips
Always cook the pasta al dente.
Make sure to reserve the pasta water in case to use it later while cooking.
Always add fresh parsley to bring out the best flavors.
Don’t change the extra virgin olive oil with plain olive oil, the taste won’t be the same.
You could also add some red chilly flakes to add some kick in the pasta.

Spaghetti Aglio e Olio
Equipment
- Saucepan
- Colander
Ingredients
- 1/2 package/8 oz spaghetti enriched pasta
- 4-5 garlic cloves minced
- 1 teaspoon red chilly flakes optional
- salt to taste
- 1/4 cup parsley chopped
- 6 tablespoon extra virgin olive oil
Instructions
- Boil water in a pan and add the pasta with salt and a teaspoon of olive oil.
- Cook till pasta is tender. Drain the excess water and run the pasta under tap water in a colander. Make sure to save some water in case to add in later.
- Drizzle pasta with some olive oil and set aside.
- Heat 4 tablespoons of olive oil in a pan. Add the minced garlic and saute till golden in color.
- Now add the spaghetti and red chilly flakes. Stir and add 2 tablespoons of water strained from the pasta.
- Cook until all water is absorbed. Add chopped parsley leaves and stir well until combined.
- Serve hot.
