Dhaba style Aloo gobhi
Aloo Gobhi is a potato and cauliflower dry curry that is quite popular in Punjabi Cuisine. There are many versions of this dish like the home style and another one where cauliflower and potatoes are fried with onions and garlic that is dhaba style.
Dhaba Style aloo gobi is a specialty of roadside dhaba’s on the Delhi-Punjab highway and is also popularly made during weddings in North India. This is also known as aloo gobi punjabi dhaba style recipe.
Completely different in taste from the normal version, Dhaba-style aloo gobi is made from fried potatoes and cauliflower and is more flavourful, spicy, and amazingly delicious. Ingredients needed for dhahba style aloo gobi
- Potato-Potatoes, medium, or small-sized.
- Gobi-Cauliflower florets cut into small pieces.
- Tomato and green chili: Tomato and green chili add texture and flavors to the dish.
- Onion, Ginger, and Garlic: Adds nice flavor and texture in the aloo gobi.
- Spices: Basic spices like coriander, turmeric, garam masala, and red chili powder, asafetida, fenugreek, and salt is used.
- Coriander leaves-A must in the recipe as it brings amazing flavors.
- Oil: For deep frying and to prepare the masala
How to make Dhaba style Aloo Gobi?
Step 1. Fry potatoes and cauliflower– Heat oil for frying in a big wok. Add potatoes, fry till golden, drain on paper towel and keep aside. In the same oil, fry cauliflower florets till golden, drain, and keep aside.
Step 2. Make masala– Remove excess oil from wok and leave about 4 tablespoon oil. Add asafetida, cumin seeds, and dried fenugreek leaves.
Keeping the heat low to medium, add minced garlic and grated ginger. Sauté till golden. Add onion slices and sauté for 5 minutes till dark brown in color.
To this add all spices and salt and garam masala, stir and add chopped tomatoes and green chillies. Sauté till oil comes out from edges on medium to high heat with continuous stirring.
Step 3. Add veggies to masala-When tomatoes are done, add fried potatoes and cauliflower. Mix well and cook for 5-6 minutes. Garnish with coriander leaves.
Serving Suggestions
Serve the dhaba style aloo gobi with Paratha, Naan bread or roti, raita and salad.

Equipment

Ingredients
- 4-5 medium-sized potatoes peeled and cubed
- 1 medium-sized cauliflower head florets
- 2 onions thinly sliced and separated
- 6-8 cloves garlic minced
- 3 tomatoes thinly sliced
- 4 green chilies chopped
- 2 teaspoon ginger grated
- 1/2 teaspoon asafetida
- 2 teaspoon cumin seeds
- 2 teaspoon dried fenugreek leaves /kasuri methi
- oil for frying
- 1/2 cup coriander leaves chopped
Spices
- 1 teaspoon turmeric powder
- 3 teaspoon coriander powder
- 2 teaspoon Kashmiri red chili powder
- 1 tea on red chili powder
- 2 teaspoon garam masala
- salt to taste

- In the same oil, fry cauliflower florets till golden, drain, and keep aside.
