Aloo Gobi | How to make Punjabi Aloo Gobi

Aloo Gobi is a very delicious and super tempting curry made with cauliflower and potatoes are perfect to pair with hot ghee smeared roti.

What is Aloo Gobhi/Gobi?

Aloo Gobhi is potato and cauliflower dry curry that is quite popular in Punjabi Cuisine. There are many versions of this dish like home style, with onions and garlic and Dhaba style. This recipe is very simple and the way I make it at home normally.

Each house has its own recipe. Some people like to make it in the pressure cooker while others make it in a kadhai or open pan.

Cauliflower is one of the Cruciferae vegetables if eaten on a regular basis provides many health benefits. Aloo gobi is very tasty and healthy as it is rich in nutrients and flavor too.

Basic Ingredients for Aloo Gobi:

  • Firstly, Aloo-Potatoes, medium, or small-sized.
  • Gobi-Cauliflower florets cut in small pieces.
  • Tomato and green chilli: Tomato and green chilli adds texture and flavors in the dish.
  • Ginger-Adds a nice flavor and helps in digestion too.
  • Spices: Basic spices like coriander, turmeric, garam masala and red chili powder is used
  • Coriander leaves-A must in the recipe as it brings amazing flavors.

How to make Aloo Gobi?

First of all, wash and cut your vegetables. Now all you need to do is cook potato and cauliflower on lo medium heat with oil, cumin, asafetida, fenugreek, and ginger. Let the veggies become soft, stir occasionally.

Once veggies are soft, bring them into the side of the pan. One the empty space add the tomato, green chilli and spices along with salt. Now cover the tomatoes with the potato and cauliflower that we shifted in the corner.

Let it cook again on slow until tomatoes are soft. Finally open the lid, mix the vegetables and cook on medium flame for 2 more minutes.

Add some chopped coriander leaves, and enjoy.

Serving Suggestions

Serve the aloo gobi with Paratha or roti, raita and salad.

  • Heavy Bottom Pan

Ingredients
  

  • 1/2 kg cauliflower florets
  • 3-4 small potatoes cut into cubes
  • 1 teaspoon ginger grated
  • 2 green chilly chopped
  • 2 -3 tomatoes chopped
  • 2 tablespoon oil
  • a pinch asafetida
  • 1 teaspoon cumin seeds-
  • 2 teaspoon dried fenugreek leaves optional
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilly powder
  • 2 teaspoon garam masala
  • 2 tablespoon coriander leaves chopped

Instructions
 

  • Heat oil in a large pan add asafetida, dried fenugreek leaves, cumin and ginger.Saute for two minutes and add cauliflower and potatoes, mix well and cover the lid.
  • Cook till vegetables are done then add all spices and salt .Stir for two minutes.
  • Bring the potato and cauliflower into a side of the pan and add chopped tomato, chillies on the empty space. Now cover with vegetables(cauliflower and potato).
  • Stir slowly till water from tomatoes evaporates and spices are mixed and oil comes out.
  • Garnish with coriander and serve with roti or paratha.

Notes

Adjust the spices a sper your taste.

    We are always looking for new curry recipes to make at home, and this version seems absolutely delicious! We certainly don’t incorporate enough cauliflower into our diets, so this is a great reason to do that. So excited to try all of these flavors and textures together!

    Love the coulours and how easy to make this cauliflower dish sounds. All these flavours and deep turmeric colour makes me want this so much right now accompanied by a roti – mmmm – I will be making this ASAP.
