Festive Couscous with Pomegranate-A super refreshing couscous drizzled with lemon juice, mint, cilantro and pomegranates pearls is a nice and filling dish for lunch boxes.

Couscous is my favorite dish when it comes to super quick, easy and filling lunch box dishes. Weather serve it with spicy harissa sauce, or curried couscous, couscous Upma it just never gets boring.

My husband loves couscous in his lunchboxes and that is one dish he never complains about it. So experimenting with couscous is just what I do on those busy mornings when preparing lunchboxes.

This week I am going to post easy lunch boxes recipes that I usually pack for my husband in his lunchbox as my next theme is lunch boxes for adults.

So this festive couscous is the recipe that I tried last Christmas from Nigella’s Christmas recipes and been making it ever since for our lunch and lunchboxes.

Festive Couscous

A super refreshing couscous drizzled with lemon juice, mint, cilantro and pomegranates pearls is a nice and filling dish for lunch boxes.

Ingredients
  

  • 1 cup couscous
  • 1/2 cup pomegranate pearls
  • 1/4 cup mint and cilantro leaves, chopped
  • 1 teaspoon curry powder
  • 1 tablespoon lemon or lime juice
  • 1/2 teaspoon paprika
  • salt to taste
  • 2 tablespoon raisins
  • 1 teaspoon olive oil
  • 3 cups water

Instructions
 

  • Boil water in a saucepan with a teaspoon of oil and salt for few minutes.
  • Add the boiled water in a mixing bowl, stir in curry powder, paprika and couscous. Cover the lid and let it rest for about 15 minutes.
  • Once couscous is done, add pomegranate pearls, raisins, and mint and cilantro leaves. 
  • Drizzle in lemon juice. Adjust the seasonings and serve.

Notes

Adjust the seasonings as per your taste preferences.
When serving in the lunch box keep the herbs and pomegranate in the separate bowl and add right before eating.

    Very vibrant and appealing to look at ! And I love couscous just for the same reasons as you described. But this is a very nice way to serve couscous.

    I love sweet and savory dishes a lot. So anything with raisins, cranberries, pomegranate always attract me. Your couscous salad looks so simple to make with just a few ingredients but sounds so delicious.

  3. Love the colour of the preparation.Makes it very tempting. I too love couscous and it makes such a filling dish and its healthy too. One can add about anything to it.

    I have a pack of couscous and I think it is time to use it. The other varieties you mentioned sounds delicious as well. This one looks very delicious and I am sure will be liked at my place as well.
