Boil water in a saucepan with a teaspoon of oil and salt for few minutes.
Add the boiled water in a mixing bowl, stir in curry powder, paprika and couscous. Cover the lid and let it rest for about 15 minutes.
Once couscous is done, add pomegranate pearls, raisins, and mint and cilantro leaves.
Drizzle in lemon juice. Adjust the seasonings and serve.
Notes
Adjust the seasonings as per your taste preferences.When serving in the lunch box keep the herbs and pomegranate in the separate bowl and add right before eating.
