Vegan Oatmeal Raisin Cookies- A tasty and healthy oatmeal and raisin cookies to pair with a cup of milk for those evenings when you just want to dunk in milk and cookies.
It’s been more than a year since I have been away from blogging rather I would say from the group blogging marathon.
If you are a regular reader you must know that I am a member of the blogging marathon group hosted by Srivalli of Spicingyourlife where a group of fellow bloggers posts recipes every month.
I am joining these ladies after such a long time and frankly, it feels so good to be back. Blogging has been a part of my life fro last si years and while I was MIA, it felt like something was missing.
There was this tingling in my stomach and I wanted to be back so badly but I was preoccupied with so many personal things that I could not come back early. Better late than never, from now onwards hopefully I will stay active, finger crossed.

Vegan Oatmeal Raisin Cookies
Equipment
- Baking Tray, Mixing Bowl
Ingredients
- 1 cup porridge oats
- 1/4 cup almond meal
- 1/4 cup whole wheat flour
- 2 tablespoon maple syrup
- 1/4 cup applesauce
- 1/4 cup almond milk
- 1/4 cup raisins
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Instructions
- In a mixing bowl add oatmeal, almond meal, and whole wheat flour, baking soda and salt and give it a nice stir.
- Add in applesauce, vanilla extract, and almond and mix well until all the ingredients combined.
- Stir in raisins into the mixture and mix again.
- Make small balls from the cookie dough and arrange them on the prepared baking tray.
- Gently flatten all of the cookies balls with hands or back of the spoon.
- Bake in preheated oven for about 15 to 17 minutes or until golden.
- Remove from oven and let the cookies cool down before serving.
- Store in airtight containers. Serve and enjoy.
