Rajgira Paratha

This is the second day of fasting I am sharing this healthy and gluten free Rajgira flour Paratha/Roti recipe. Rajgira flour is amaranth seed flour and is considered to be a superfood because of its highly nutritive value.I guess I should include it in our diet more often rather than only in fasting.

Navratri Day 2
Dish-Rajgira Paratha
Ingredients:
1 cup Rajgira/amaranth/Chaulai flour
1 medium sized potato,boiled
1 green chilli,chopped
1 tablespoon coriander leaves,chopped
1 teaspoon ginger,grated
1/2 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon amchur powder
sea salt/saindha namak to taste
oil for shallow frying
Method:
In a mixing bowl ,add rajgira flour,mashed potato,green chilli,coriander leaves and ginger.Mix well
Now add cumin seeds ,amchur ,coriander powder and salt.Knead the dough using a tablespoon or as required water .
Make 4 round balls from the dough.Dust one ball with dry amaranth flour and roll it in a circle using a rolling pin.
Transfer the paratha over a preheated pan or tawa.
Apply a teaspoon of oil and cook from both sides till done.Repeat the same with remaining dough balls.

Serve warm with Falahari aloo sabzi and yoghurt.

Serve-2 Cooking time-20 minutes


Notes:
Do not add all water at once or else dough will be soggy.
If dough ball seems sticky to roll ,use cling film to roll.
