Vegan Oatmeal Raisin Cookies- A tasty and healthy oatmeal and raisin cookies to pair with a cup of milk for those evenings when you just want to dunk in milk and cookies.

It’s been more than a year since I have been away from blogging rather I would say from the group blogging marathon.

If you are a regular reader you must know that I am a member of the blogging marathon group hosted by Srivalli of Spicingyourlife where a group of fellow bloggers posts recipes every month.

I am joining these ladies after such a long time and frankly, it feels so good to be back. Blogging has been a part of my life fro last si years and while I was MIA, it felt like something was missing.

There was this tingling in my stomach and I wanted to be back so badly but I was preoccupied with so many personal things that I could not come back early. Better late than never, from now onwards hopefully I will stay active, finger crossed.

Vegan Oatmeal Raisin Cookies

Equipment

  • Baking Tray, Mixing Bowl

Ingredients
  

  • 1 cup porridge oats
  • 1/4 cup almond meal
  • 1/4 cup whole wheat flour
  • 2 tablespoon maple syrup
  • 1/4 cup applesauce
  • 1/4 cup almond milk
  • 1/4 cup raisins
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions
 

  • In a mixing bowl add oatmeal, almond meal, and whole wheat flour, baking soda and salt and give it a nice stir.
  • Add in applesauce, vanilla extract, and almond and mix well until all the ingredients combined.
  • Stir in raisins into the mixture and mix again.
  • Make small balls from the cookie dough and arrange them on the prepared baking tray.
  • Gently flatten all of the cookies balls with hands or back of the spoon.
  • Bake in preheated oven for about 15 to 17 minutes or until golden.
  • Remove from oven and let the cookies cool down before serving.
  • Store in airtight containers. Serve and enjoy.

Notes

You may use chocolate chips instead of raisins to make them kids friendly.

  1. Oh my , these cookies look just fabulous and the fact that they are made using oatmeal, almond flour and whole wheat flour makes them so nutritious and guilt free. Thanks for sharing such an awesome recipe.
