Oreo Cupcakes

My daughter love Oreo cookies …..me too!! Some time back I have seen this recipe on a show , I didn’t remember clearly but I had noted down it in my diary. Yesterday I tried out these cookies for +srivalli jetti ‘s Cooking from Cook book Challenge . The chocolate filled cookies in cupcakes tasted wonderful and everybody liked these twisted cupcakes topped up with some melted chocolate and crushed Oreo cookies. So let’s start the recipe . Yum

Ingredients:


For the cupcakes:

1 /4 cup unsalted butter
1 cup milk
2 tsp vanilla extract
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1 pkg Oreo Cookies (~24cookies)
1 teaspoon egg replacer, dissolved in 1 tbsp water

For Frosting:

10 Oreos, crushed
1/2 cup butter, softened
4 Tablespoon milk
1 cup powdered sugar
2 teaspoon vanilla extract
2 teaspoon mint extract

Method:
For the cupcakes:

Preheat oven to 180 degrees. Insert liners into a medium cupcake pan.

Twist apart 24 Oreos. Place the wafer with filling on it, filling side up, in the bottom of each paper liner. Cut other wafers in half and set aside.

In a large bowl cream the butter until fluffy . Add the milk and vanilla and mix to combine.

In a separate bowl mix together the flour, baking powder, and salt.

Add the dry ingredients to butter mixture. Mix well. Stir in sugar and egg replacer . Add the halved cookies in it.

Fill the cupcake lines . Bake for about 20 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool on wire rack.

For Frosting:

In the bowl beat butter, milk, and extracts. Slowly add powdered sugar and beat again . Add crushed oreo cookies and mix well.
Apply the frosting on cupcakes , sprinkle some crushed cookies and serve chilled.
