Beetroot Pulao

A very delicious and comforting beetroot and vegetable pulao, this pulao is very easy to make one-pot meal and is perfect to make a nice and filling meal on busy weekdays.

Beetroot Pulav 

Have you ever tried this? Believe me, the beetroot pulao tastes awesome with some yogurt, pickle, and salad. This is very healthy rice and a perfect way to sneak in the beetroot in rice.

Whenever I want to make Beetroot pulav I also make beet raita to go with it. Beets change the color of rice to light pinkish and they look more beautiful.

I like to add grated beetroot but if you want you can also add beets puree or simply cubes of beetroots.

Ingredients needed to make Beet Pulao

  • First, Rice: Basmati rice tastes amazing in pulaos and biryanis.
  • Beetroot: Freshly grated, chopped, or pureed beetroot whichever way you’d want to add your beets.
  • Vegetables: Cauliflower, beans, bell peppers, or any of your favorite vegetables, feel free to add what you prefer.
  • Whole Spices: Bay leaves, Cloves, and Cinnamon sticks to enhance the flavors of rice.
  • Spices: Minimal spices like coriander powder, turmeric, red chilli powder, garam masala and salt.
Did you know apart from eating thisversatile food, beets can aslo be used to dye hair or to do the litmus test?

How to make beetroot pulao?

First step is to wash and soak basmati rice in enough water for at least 15 minutes. Soaking the rice makes very nice, fluffy and delicious pulao.

Now start sauteing the cumin,whole spices and the onions. Make sure to stir fry the onions until they are nice and golden because that’t what is going to add flavors and texture in the rice.

Once our onions are done, now add the spices and salt along with tomatoes and green chilies. Be patient and keep cooking and stirring the tomatoes until they are nice and soft.

Finally, add vegetables and saute for a few minutes add the washed and drained rice, stir and add water. Cook covered if using a pan or pot and for one whistle if cooking pressure cooker.

Make sure to cook the rice on medium low heat if using a pot for about 15-17 minutes. Once rice are cooked, remove from heat, gently mix with fork.

Serving Suggestions and Variations

Serve the beetroot pulao with raita, plain yogurt, salad, and papadums. You could also pair it with fresh mint chutney, paneer makhani, or eat them as such.

For Variations and added protein you could also include paneer, soya chunks or tofu in the pulao.

Equipment

  • Pressure Cooker or Pan

Ingredients
  

  • 2 cups basmati rice
  • 1 cup beetroot grated
  • 1 cup cauliflower florets
  • 1 cup bell pepper chopped
  • 1 cup green beans chopped
  • 1/2 cup cauliflower florets diced
  • 2 onions chopped
  • 2 to matoes chopped
  • 2 green chilies chopped
  • few coriander leaves chopped
  • Spices
  • 2 bay leaves
  • 1- star anise
  • 2-3 cloves
  • 1 teaspoon cumin seeds
  • a pinch asafetida
  • 2 teaspoon coriander powder
  • 2 teaspoon garam masala powder
  • salt to taste
  • water as required
  • 4 tablespoon vegetable oil

Instructions
 

  • Heat oil in a pressure cooker, add asafoetida, bay leaves, star anise, cloves, and cumin seeds
  • To this add chopped onion,sauté for 5 minutes. Add chopped tomatoes and chilly,sauté for10 minutes till oil comes out.
  • Then add all spices and salt except garam masala powder.
  • Add all chopped vegetables, beetroot, cauliflower, green beans, etc and stir continuously for another 10 minutes. Add washed rice, and 3 cup water or as per the type of rice.
  • Sprinkle garam masala powder and chopped coriander. Close the lid and pressure cook for 1 whistle.
  • Serve hot with yogurt, pickle and salad.
