A very refreshing and tasty cucumber and yogurt raita to pair with your favorite meal. This raita can be prepared in less than 10 minutes and it surely brings the taste of any simple meal to the next levels.

Cucumber raita is very popular in North India, especially during summertime. The cooling properties of cucumber, when combined with yogurt, make it really good condiment to scorch the heat of harsh summers.

Basic Ingredients for Cucumber Raita:

  • First, Cucumber-Fresh cucumbers, washed and peeled. I have used english cucumber so did not peeled them.
  • Herbs-Coriander and mint leaves
  • Black salt-Gives a unique taste
  • Roasted cumin powder-A must to bring amazing flavors in the raita

How to make Cucumber Raita?

I make cucumber riata two ways. Sometimes, I would grate the cucumber and then make the raita while other times I prefer finely chopped cubes of cucumber to add in the raita.

It depends on what I am serving it with. If, I am pairing it with some dry curry and poori or roti then I prefer the grated cucumbers. While if the raita is paired with pulaos and biryanis then I love the chopped cucumber pieces in the raita.

So either way, keep your cucumber ready and add it to the yogurt along with spices and herbs. For best results assemble it when you are about to serve your food.

Serving Suggestions:

Serve cucumber raita with aloo gobhi and chapati, matar pulao, soya chaap biryani, or matar paneer and paratha.

Equipment

Ingredients
  

  • 2 cups yogurt/curd
  • 1 cup cucumber, cut in small cubes or grated
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon red chilly powder
  • 1/2 teaspoon dried/fresh mint leaves
  • few coriander leaves chopped
  • 1 green chilli finely chopped(optional)
  • 1/2 teaspoon black salt
  • salt to taste

Instructions
 

  • Take yogurt in a bowl and whisk it with spoon.
  • Add all spices and salt. Mix well.
  • Now add grated cucumber, mint, coriander leaves and green chili, stir in and mix well to combine.
  • Pour in a serving bowl and enjoy with the main course.

Notes

Keep the raita refrigerated and serve chilled.
Adjust the number of spices as per your taste.

  1. The cucumber raita is one of the most cooling raitas , we love it during the peak summers , and mint gives it an amazing flavor . The raita looks amazing and the next time you make add some green chillies , it will take it a level higher . That is if you like the zing from them .

    I am always looking for new riata recipes and loved this version of cucumber raita. Addition of black salt really enhanced the flavored of raita.
