Ingredients Needed to make Barley Soup
- Tomato: Fresh tomatoes adds such amazing flavors to the soup.
- Celery Sticks: For that extra pungent flavors.
- Vegetables: Carrots, cauliflower, green beans, spinach, and mushrooms. Or use your favorite vegetables.
- Garlic and Onion: Adds a nice texture and flavors.
- Pearl barley: Dry pearl barley washed and drained.
- Basil leaves Fresh basil leaves for that extra peppery flavor.
- Dried basil and Oregano: Adds nice flavors to the soup, you can also use fresh herbs instead.
- Salt, Chilli flakes & Pepper: Seasonings to enhance the flavors.
- Lemon juice: To balance the sweetness of vegetables.
How to make Vegetable Barley Soup?
Heat oil in a pan and add garlic. Saute for a minute and then add onions. Stir and add all of the vegetables except spinach leaves.
Mix and add the washed and drained barley, salt, basil, and oregano. Stir to combine the ingredients. Add 6 cups of water and let it cook on medium heat until barley is soft.
After 20 minutes, open the lid and add spinach leaves. Cook for 2-3 minutes more. Finally, add lemon juice and serve warm with more seasoning if desired.
Serving Suggestions
Serve the veg barley soup with toasted bread. You may also serve it as it is.

- 1 medium-size onion
- 1 to mato
- 1 celery stick
- 2 carrots medium size
- 7-8 mushrooms
- 1/2 cauliflower head
- 1 cup green beans
- 2 cups spinach
- 1 cup pearl barley
- salt to taste
- few fresh basil leaves
- 1/2 teaspoon dried basil
