Vegan Oatmeal Pancakes

These vegan oatmeal pancakes are so easy to make and taste absolutely amazing. Pair them with homemade salted caramel sauce and enjoy the yummiest vegan pancakes ever.

Vegan Oatmeal Pancakes:

These vegan oatmeal pancakes are a super easy and yet very healthy treat for yourself and your whole family. Frankly, no one will ever miss the dairy in these pancakes.

Here are a few good things about the vegan oatmeal pancakes.

  • Requires less than 10 INGREDIENTS ONLY.

  • Kids friendly (believe me my girls won’t stop eating them).
  • Last but not least -SUPER ADDICTIVE.

Basic Ingredients for Pancake:

So the basic things needed to make these pancakes are listed below.

  • Firstly – Oatmeal flour is required to make the oaty pancakes. If you haven’t got any flour at home, do not worry and make your own. Go through notes to see how to make it.
  • Almond flour- I used almond flour to add some protein in the pancakes, you can simply omit and or replace it with plain flour as well.
  • Bananas- To add bulk and blend in the ingredients I used bananas. If you don’t like bananas simply add any fruit puree or simply replace it with vegan yogurt.
  • Sweetener- Any sweetener of your choice is fine. I preferred to use maple syrup.
  • Baking powder- We definitely need something to puff up our pancakes and that’s what BP is going to do in the recipe.
  • Apple cider vinegar-It si totally optional to use in the recipe but I would highly recommend as the vinegar balances all the sweet flavors.

Serving Suggestions:

Well, when it comes to toppings for pancakes the list is endless. You can literally use whatever you like and want to experiment. I had some homemade salted caramel which tasted absolutely amazing on my pancakes.

The mangoes were icing on the cake and took the pancakes on another level of goodness.

But I am suggesting you all use your choice of fruits, honey, cream, yogurt, sauces or whatnot!

Equipment

Ingredients
  

  • 1 cup oatmeal flour
  • 1/4 cup almond meal flour
  • 2 bananas, mashed
  • 1/4 cup maple syrup/honey
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup almond milk
  • 1 teaspoon apple cider vnegar

Topings

  • 1 mango, cut in cubes
  • 1/4 cup caramel sauce, skip to make it completely vegan

Instructions
 

  • In a mixing bowl add oatmeal flour, almondmeal , baking powder and salt. Give it a nice stir and set aside.
  • In another bowl mash the bananas wth fork , add maple syrup and almond milk. Stir and add vanilla extract.
  • Once everything is combined add the apple cider vinegar in the wet ingredients.
  • Finally mix the flour with the banana mixture. Adjust the batter consitency by adding little bit water, if required.
  • Heat a skillet or pan and smear some oil on it. Pour a ladleful of pancake batter and cook it covered on low to medium heat.
  • Once you see bubbles on the top flip it to cook from other side.
  • Remove from pan and start stacking all the pancakes.
  • Serve warm drizzled with mangoes, caramel or any other vegan sauce.

Notes

  1. You can make your own oatmeal flour, blitz a cup of oatmeal in blender or grinder until fine powder.
  2. Use your imaginations for toppings like berries, caramel fruits, vegan sauces, cream etc.
