Vegan Tex Mex Rice

Vegan tex mex rice is rice cooked in Texas-Mexico style with loads of onion, garlic, beans, peppers, and corn. This is a one-pot rice dish that is very filling and nutritious as well.

What is Tex Mex rice?

Tex Mex cuisine is mainly representing southern American and borders cuisine which includes loads of ingredients like beans, corn, tomato and spices in their cooking.

Tex Mex rice is one of the recipes inspired by the cuisine, mainly it is cooked with beef or non-veg basically but I made it vegan to suit our palate.

Basic Ingredients for Tex Mex Rice:

The basic ingredients used to make tex mex rice are listed below.

  • Firstly rice-Rice is the base of this one-pot dish and you can use any kind of your preferred rice. I used normal basmati rice to make the tex mex rice.
  • Beans-Black beans/kidney beans/rosecco beans or any of your favorite beans are fine to use in the dish.
  • Corn-Corn adds a nice crunch and added texture to the tex mex rice, do not skip this ingredient if you are looking for a more flavorful dish.
  • Bell peppers-All colorful bell peppers for that extra crunch and color in the rice are highly recommended.
  • Onions-Garlic-White onions are suitable for the recipe and loads of minced garlic for that garlicky flavor.
  • Spices-You may use ground cumin, coriander, paprika, basil, and oregano or you can use taco seasoning to make the tex mex rice. It’s total up to your taste and preferences.
  • Salt-Can’t does without this ingredient.
  • Oil-I used normal olive oil to make the tex mex rice but you can use any cooking oil.
  • Cilantro-For refreshing flavors and color in the dish.

Equipment

  • Sauce pan

Ingredients
  

  • 2 cups rice
  • 1 cup cooked black beans
  • 1/2 cup corn
  • 1 cup bell peppers, chopped
  • 3 tomatoes, chopped
  • 2 tablespoon tomato paste
  • 2 white onions, chopped
  • 5-6 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • salt to taste
  • pepper to taste
  • 4 tablespoon oil
  • 2 tablespoon cilantro leaves to garnish
  • 4 cups water or vegetable stock

Instructions
 

  • Heat oil in a wide pan and suate onions and garlic.
  • Once onions are soft, add tomatoes, tomato paste and cook until tomatoes are soft.
  • Now add bell peppers, corn and beans and give a nice stir. Add in cumin, coriander, salt, paprika,oregano and basil and mix everything to combine.
  • Add in washed and drained rice and water/vegetable stock. Cook covered until rice are done and all water is absorbed.
  • Garnish with cilantro leaves and serve warm.

Notes

  1. Adjust the spices and paprika as per your taste.
  2. You may add vegetables of your choice.
  3. This dish can be made using cooked rice.
