Aval Dosa Recipe

Aval dosa is a crispy and delicious South Indian style dosa which tastes absolutely amazing with peanut chutney.

What is Aval?

Avai is known as poha/chiwda, are dry flakes of flattened rice, used in a variety of breakfast recipes in India. The rice is first cooked until parboil and then flattened so that it needs very less cooking time.

Aval can be cooked by adding warm or cold water or milk and they swell in size after absorbing the moisture from the liquid.

What is Aval dosa?

Aval dosa is made with a fermented batter of rice, lentil, and aval. The addition of aval in the dosa recipe makes it more crispy as well as soft from inside.

Some people make the dosa with only rice and lentil while others add aval, chana dal or toor dal. There are so many variations, everyone has their own recipe.

So the aval dosa is like the regular dosa but with added flattened rice to make crispy soft dosa.

Basic Ingredients for Dosa:

  • Firstly Aval/Poha/Flattened rice- The main ingredient is after rice and lentil is flattened rice.
  • Rice
  • Urad dal
  • Fenugreek seeds

How to make aval dosa?

The process starts with soaking the rice, lentil, and aval in water overnight. And then comes the grinding part wherein you need to grind the grains separately.

Once the soaking grinding is done then the batter needs to be placed in a warm place for fermentation.

When the batter is fermented well, then the final step is to make the dosa. Heat a skillet and spread a ladleful of batter in circular motions. Cook from one side and then flip to cook from the other side. Drizzle some ghee on both sides to cook a nice and crispy.

Serving Suggestions:

Serve the aval dosa with coconut chutney, sambhar and or tomato chutney.

Aval dosa is a crispy and delicious dosa made with a fermented batter of rice, lentils and flattened rice. It tastes just amazing with peanut chutney and makes a wonderful breakfast, brunch or dinner recipe.

Equipment

Ingredients
  

  • 3 cups parboiled rice, I use sona masori brand
  • 1 cup split urad dal
  • 1 cup aval/poha/flattened rice
  • 1 tablespoon fenugreek seeds
  • salt to taste
  • oil or ghee as required
  • water as required

Instructions
 

  • Wash rice and dal separately in running water and soak in mixing bowls with enough water to cover in.
  • Add some fenugreek seeds into the dal mixing bowl.
  • Let the rice and dal soak in water for at least 6 hours to overnight.
  • Wash aval with water until soft and add it to the soaked rice bowl.
  • Now grind the soaked dal and rice separately until a smooth batter is formed. Use water as required.
  • Once the batter is formed transfer it into a big mixing bowl and mix the dal and rice batter with your hands.
  • Preheat oven to 180 degrees for 10 minutes and then turn it off.
  • Keep the batter in a preheated oven for overnight.
  • Next day add salt in the batter and adjust the consistency of the batter with water.
  • Heat a dosa tawa and add a ladleful of dosa batter on it.
    Spread evenly with the help of spatula. Drizzle some oil or ghee on the edges.
    Cook until it is crispy and golden. Remove the dosa from tawa and serve with peanut chutney or sambhar.
