Instant Rava Uttapam and Blackberry Smoothie-A pillowy soft, mildly spicy and tasty instant rava aka semolina uttapam topped with tomatoes, coriander, and green chilies and served with healthy and tasty blackberry smoothie.

The instant rava uttapam is my favorite breakfast ever, I mean literally, I can eat this every day without any complaints. Frankly speaking, I have never tried the classic uttapam with idli dosa batter as I always make it with rava.

So when everyone is at school and office and I am back home dropping the girls, I make myself a tall glass of any fruit smoothie and some instant rava uttapam and have a satisfying breakfast.

This was my breakfast yesterday and I also made a coconut coriander chutney to go with the uttapam. Rava uttapam tastes amazing when topped with some chopped tomato, onions and coriander leaves but as I did not have any onions on hand so I skipped adding.

Recently my girls also started liking the uttapam but with lesser vegetables. It is a totally easy and filling breakfast dish that can also be served as lunch or light mid-morning meal.

Whenever Mr. H sees some recipes on the website that he doesn’t know about he calls me from office asking when did I made that and why he hasn’t got chance to taste it etc. So I always reply him that I knew you would not like it that’s why I made it in the morning and finished too.

Recently I went to a brands and bloggers conference at Dublin where I got to meet so many food bloggers in Ireland and also get connected to local Irish brands too. One of the brands was Homespun and they are making quinoa crunch with lots of added goji berry, coconut flakes, buckwheat groats.

We got some samples from the brands and this quinoa crunch has become my favorite toppings on smoothies.

Instant Rava Uttapam & Blackberry Smoothie

Ingredients
  

For Uttapam

  • 1 1/2 cup fine semolina/rava/suzi
  • 1 cup sour buttermilk
  • 2 cups water
  • 1 tomato, chopped
  • 2 green chillies, finely chopped
  • 1/4 cup coriander leaves, chopped
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon baking soda
  • salt to taste
  • 1 teaspoon lemon juice
  • 1 tablespoon ghee

For Blackberry Smoothie

  • 1 cup blackberries
  • 1 banana
  • 1/2 cup yougurt
  • 1 1/2 cups milk
  • 1-2 dates
  • puffed quinoa to top

Instructions
 

For rava uttapam

  • In a mixing bowl add rava, yogurt, water, cumin and salt. Mix well to make a lump-free batter.
  • When ready to make uttapam add some baking soda and lemon juice to the batter and mix well.
  • Heat a skillet and smear some ghee on it. Pour a ladleful of uttapam batter into the skillet and spread it a little with the back of the spoon.
  • Sprinkle red chilli powder, tomatoes, green chilli, and coriander leaves on the uttapam and let it cook for 1-2 minutes on low to medium heat.
  • Once you see tiny bubbles on top, flip the uttapam with the help of the spatula and cook for a minute.
  • Likewise make the remaining uttapam and place in a plate or tray.
  • Transfer the uttapam in serving plates and serve with chutney.

For smoothie

  • In to the blender add all the ingredients for the smoothie except the toppings. Pulse until smooth.
  • Pour into serving glasses and serve topped with your desired toppings.

Notes

Make sure to add the soda and lemon juice only when you are ready to make and eat the uttapam.
I also add some chopped onions on top of uttapam but skipped as I was running out.

    So far i have tried only instant rava dosa, not uttapam. It sounds simple and delicious, Sapana. And the black berry smoothie is really catchy and sounds healthy. Perfect for breakfast !!!

    I’ve nevertheless tried instant uttappam with rava Sapana. I will have to try it because I’m too lazy to grind the batter and this instant one will be just perfect. My husband also finds out what I cooked after reading the blog – he’s traveling most of the time, so missing 60-70% of what I cook.

    I am the other way round, I always make uttapam with leftover idli dosa batter. With rava its always the crispy rava dosa. This is a great idea to make uttapam. Glad you went to the conference. I love conferences for networking and knowing the local brands.

    Blackberry smoothie with crunchy quinoa topping, so yummy. Can’t wait to get to Montreal this year to have my berries smoothies.I’ve not tried rava uttapams as yet, always use the normal rice dal batter. I will try the instant one soon as both hubby and I love uttapams.

    The rava uttapam looks super delicious and that blackberry smoothie is just so yum! I hve couple of blackberry bushes in my backyard and I can’t wait for them to start producing. Love the color of the smoothie and the quinoa crunch sounds very interesting.
