Veg Nachos

Veggie loaded nachos topped with refried black beans, bell pepper fajita, and loads of guacamole. This is just a perfect and healthy way to enjoy Mexican food.

Nachos

Nachos are corn tortilla chips, served with heated melted butter. Beside a wonderful appetizer, they are also served as a main paired with refried beans, fajitas and salsa/guacamol.

For variations, you can make Chipotle Nacho, or nachos topped with any of your favorite veg/meat toppings. Sometimes, I even make nachos with cheese and jalapeños only. It is the best ever easy and delicious Mexican dish to enjoy on lazy weekends or whenever you want.

Ingredients Needed for Veg Nachos

  • Tortilla chips: Plain tortilla chips.
  • Black / red beans: To make the refried beans. Canned beans can also be used.
  • Bell peppers: Tri-color bell pepper to make the fajita.
  • Tomatoes: Adds nice zing in refried beans and fajita.
  • Onions and Garlic: For flavors.
  • Jalapenos and Olives: Adds nice crunch and taste in the nachos.
  • Avocado: To make guacamole for the nachos.
  • Coriander leaves: For that refreshing flavor.
  • Lemon juice: Adds a nice tanginess in the whole nacho platter.
  • Spices: Coriander, cumin, paprika, salt, and pepper.
  • Oil: To make the beans and fajita.
  • Cheese and Sour cream: For toppings.

The dish Nachos was named after a guy named NACHO and the first nachos made were very simple made with fresh tortilla chips, shredded cheese, and some jalapenos.

How to make Veg Nachos?

Step 1. Make refried beans

  • Heat oil in a pan and add onions and garlic. Saute for a minute and then add tomatoes and bell peppers.
  • Stir for a minute or two and then add beans, paprika, coriander powder, salt, pepper, and cumin seeds powder.
  • Let it cook on low medium heat until beans are combined with vegetables. Mash it using a potato masher, if desired.
  • Add coriander leaves, parsley leaves, and lemon juice and set aside.

Step 2. Make bell pepper Fajita

  • Heat oil in a pan and add garlic. Saute for a minute and then add onions, tomatoes, and bell peppers.
  • Stir for a minute or two and then add, paprika, coriander powder, salt, pepper, and cumin seeds powder.
  • Let it cook on low medium heat until vegetables are slightly soft.
  • Add oregano, coriander leaves, and lemon juice and set aside.

Step 3. Make guacamole

  • Cut the avocados in halves. Remove the centers and mash the pulp with a fork.
  • Add the lemon juice to prevent darkening and then mix in the remaining ingredients and mash with the back of a fork.

Step 4. Assembling

  • Arrange tortilla chips in a plate or bakin gtray. Top up with a layer of refried beans and bell pepper fajita.
  • Sprinkle cheese. Put it in the oven for 5 minutes, just to melt the cheese.
  • Now add some guacamole and sprinkle olives, jalapenos, and top up with sour cream.
  • Serve warm sprinkled with taco seasoning.

Serving Suggestions

Serve this yummy veg nachos platter with your favorite drink like fruit punch, virgin mojito, lemonade, or fruit juices. You may also pair it with tomato salsa or salsa de Verde.

For Refried Beans

  • 1 cup black beans boiled

For Bell pepper Fajita

  • 1 cup tri-color bell pepper sliced
  • 2 to matoes sliced
  • 1 large onion sliced
  • 3-4 garlic cloves minced
  • 2 teaspoon paprika
  • 2 teaspoon coriander powder
  • 1 teaspoon cumin seed powder
  • 1 teaspoon oregano
  • salt to taste
  • black pepper to taste
  • 1/4 cup coriander leaves chopped
  • 1 teaspoon lemon juice

For guacamole

  • 2 ripe avocados
  • 1/2 tablespoon lemon juice
  • 1 onion chopped
  • 1 tomato chopped
  • 1 green chili chopped
  • salt to taste
  • few coriander leaves chopped

Other Ingredients

  • 2 bags plain tortilla chips
  • 1/2 cup cheddar cheese
  • 1/4 cup sour cream, optional
  • 1/4 cup olives, sliced
  • 1/4 cup jalapenos

Instructions

Notes

  1. Adjust the spices and salt as per your taste.
  2. You can choose the veggies of your choice to make fajita.
  3. Instead of garlic, you can also use garlic powder.
