Veg Quesadillas (+ Video)

Veg Quesadillas are tortillas stuffed with bell pepper and mushroom fajita and spicy refried beans filling. It is a very popular Mexican dish around the globe and a wonderful and delicious meal for lunch or dinner.

What is Quesadilla?

Quesadillas are stuffed tortillas and a very popular Mexican dish. Traditionally it is made with corn tortillas and are filled with cheese vegetables, beans, meat, and rice. The corn tortilla can be replaced with a flour tortilla and filled with any variety of stuffing, be it meat or vegetables.

There are two ways to make quesadillas, either full or half. For the full quesadillas, stuffing is sandwiched between two tortillas, while the half quesadilla is made from one tortilla folded into a half-moon shape.

Quesadillas are very popular and sold throughout the world in all of the Mexican restaurants. This dish has evolved with time and is often made with a variety of fillings and ways of preparations i.e. baking, deep-frying, and grilled.

Veg Quesadilla with Refried Beans and Fajita Stuffing

Traditionally refried beans are mashed after cooking and fajita is made with grilled meat. Here I have made the beans chunkier and prepared fajita with sauteed mushrooms and bell peppers instead.

Ingredients Needed to make Quesadilla

  • Beans: Black beans or any other kind of beans you’d prefer.
  • Bell peppers: Tricolor bell peppers for the beautiful color and texture.
  • Mushroom: Button mushrooms or any other variety you like.
  • Onions and Garlic: Adds a nice texture and flavors to the dish.
  • Cheese: Normally cheddar cheese tastes best but you can use any kind of cheese.
  • Tortilla: Flour or corn tortilla.
  • Spices: Ground cumin, coriander, paprika, salt, and black pepper.
  • Herbs: Coriander, parsley and oregano.

Quesadilla literally means “little cheese thingy” were first originated among Aztec people. They used to fill them with squash and pumpkin and baked them in clay ovens.

Hoe to make Quesadilla

Step 1. Re-fried Beans– Heat oil in a pan and saute onions and garlic along with tomatoes and bell peppers. Stir fry for a few minutes and then add boiled black beans, spices, and salt. Let it cook on low medium heat until beans are combined with vegetables. Mash it using a potato masher, if desired. Add coriander leaves, parsley leaves, and lemon juice and set aside.

Step 2. Make Fajita– Heat oil in a pan and saute garlic, onions, tomatoes, and bell peppers. Stir for a minute or two and then add the spices and salt. Let it cook on low medium heat until vegetables are slightly soft. Add oregano, coriander leaves, and lemon juice and set aside.

Step 3. Assembling– Warm one tortilla on a skillet on the cooktop. Arrange a layer of cheese, refried beans, bell pepper fajitas on one side of the tortilla. Top it up with another layer of cheese, if desired. Sprinkle some coriander leaves. Fold it into a half-moon. Let it cook from both sides until brown and crisp. Repeat the same procedure for remaining tortillas. Alternatively, you can grill the tortilla in a preheated oven for 10 minutes or until the cheese is melted.

Serving Suggestions

Serve the quesadilla with a refreshing glass of virgin mojito, fruit punch, or any other beverage. You can also pair it with some guacamole or salsa de Verde.

Pro Tips

  • You can prepare the beans and fajita a day before and store in refrigerator.
  • Add your favourite vegetables in the fajita .
  • Spice up the whole dish by adding some jalapenos and olives.
  • Use corn tortillas to make quesadillas more crispy.
  • You may brush the quesadillas with oil while cooking.
  • Store leftover refried beans and fajita in the refrigerator or freeze up to a month.

Ingredients
  

For Refried Beans

  • 1 cup black beans boiled
  • 1 large onion diced
  • 2 tomatoes chopped
  • 3-4 garlic cloves chopped
  • 1 cup bell pepper diced
  • 2 teaspoon paprika
  • 2 teaspoon coriander powder
  • 1 teaspoon cumin seeds powder
  • salt to taste
  • black pepper to taste
  • 2 tablespoon oil
  • 1/4 cup coriander leaves and parsley to garnish
  • 1 teaspoon lemon juice

For Mushroom Bell pepper Fajita

  • 1 cup tri-color bell pepper sliced
  • 8-10 mushrooms sliced
  • 2 tomatoes sliced
  • 1 large onion sliced
  • 3-4 garlic cloves minced
  • 2 teaspoon paprika
  • 2 teaspoon coriander powder
  • 1 teaspoon cumin seed powder
  • 1 teaspoon oregano
  • salt to taste
  • black pepper to taste
  • 1/4 cup coriander leaves chopped
  • 1 teaspoon lemon juice

Other Ingredients

  • 1/2 cup cheddar cheese
  • 6 Flour Tortillas

Instructions
 

Make refried beans

Make bell pepper Fajita

  • Heat oil in a pan and add garlic. Saute for a minute and then add onions, tomatoes, and bell peppers.
  • Stir for a minute or two and then add, paprika, coriander powder, salt, pepper, and cumin seeds powder.
  • Let it cook on low medium heat until vegetables are slightly soft.
  • Add oregano, coriander leaves and lemon juice and set aside.

Assembling

  • Warm one tortilla on a skillet . Arrange a layer of cheese, refried beans, bell pepper fajitas on one side of the tortilla. Top it up with another layer of cheese, if desired. Sprinkle some coriander leaves.
  • Fold it into a half-moon.
  • Let it cook from this side until brown and crisp. Flip again from the other side and cook for a minute. Repeat the same procedure for remaining tortillas.
  • Serve and enjoy!

  1. You can also cook tortillas in an oven.
  2. You can choose the veggies of your choice to make fajita.
  3. Instead of garlic, you can also use garlic powder.
  4. Canned beans cal also be used.
