Mexican quesadillas filled with bell pepper and mushroom fajita and spicy refried beans filling. This is a wonderful and delicious meal for lunch or dinner.
Heat oil in a pan and add onions and garlic. Saute for a minute and then add tomatoes and bell peppers.
Stir for a minute or two and then add beans, paprika, coriander powder, salt, pepper, and cumin seeds powder.
Let it cook on low medium heat until beans are combined with vegetables. Mash it using a potato masher, if desired.
Add coriander leaves, parsley leaves and lemon juice and set aside.
Make bell pepper Fajita
Heat oil in a pan and add garlic. Saute for a minute and then add onions, tomatoes, and bell peppers.
Stir for a minute or two and then add, paprika, coriander powder, salt, pepper, and cumin seeds powder.
Let it cook on low medium heat until vegetables are slightly soft.
Add oregano, coriander leaves and lemon juice and set aside.
Assembling
Warm one tortilla on a skillet . Arrange a layer of cheese, refried beans, bell pepper fajitas on one side of the tortilla. Top it up with another layer of cheese, if desired. Sprinkle some coriander leaves.
Fold it into a half-moon.
Let it cook from this side until brown and crisp. Flip again from the other side and cook for a minute. Repeat the same procedure for remaining tortillas.
Serve and enjoy!

You can choose the veggies of your choice to make fajita.
Instead of garlic, you can also use garlic powder.
