Thiki Mithi Tomato ni Gravy

The weather in Tallahassee has been too hot as compared to Ireland , just like the summers in Delhi .Lo is facing heat rashes as this weather is quite different for her. Hopefully within few weeks she will adjust here and enjoy the surroundings as well just like the elder one.

I am looking for the perfect spot to get good clicks in the house but it may take some time to find it.
For second day of cooking Parsi recipes I made this simple yet delicious tomato gravy. This can be serve as a side dish for rice or as a condiment with main course. So let’s start the recipe.yum


Ingredients:
4 tomatoes,cut in halves
1 onion,chopped
1 teaspoon ginger garlic paste
1 cinnamon
2 cloves
3 peppercorns
3 cardamoms
1 teaspoon chilli powder
1 teaspoon cumin powder
1 teaspoon turmeric powder
1 teaspoon garam masala
salt to taste
1 tablespoon sugar/jaggery
1/2 tablespoon vinegar
1/2 tablespoon Worcestershire sauce /optional
1 tablespoon oil
Water as required
Coriander leaves,chopped

Method:
Boil 4 cup water in a pan and add cinnamon ,cloves,cardamom and peppercorns.Bring it to boil.
Now add tomatoes and onions .Cook for 2 minutes.
Discard the whole spices from the water. Remove the skin from tomatoes and purée the whole mixture.
Heat oil in a saucepan and add ginger garlic paste.saute for a minute.
Add tomato purée , cumin powder ,turmeric powder ,chili powder and mix well.
Cook for few minutes and finally add salt,vinegar,worchestrishire sauce , sugar and garam masala.
Serve hot garnished with coriander leaves.

Serve -6. Cooking time -20 minutes
