Chocolate Zucchini Cake

For the last day of BM# 43 under Healthy Desserts for kids , I made this Chocolate Zucchini Cake from King Arthur Site. I replaced a cup of all purpose flour with whole wheat flour . The Zucchini in the cake gave it a moist and gooey texture and everyone in the house loved it. No one could even predict the presence of Zucchini in it. This is a wonderful idea to incorporate veggies in the cake and make it healthy for kids.So let’s start the recipe.yum

Ingredients:
1/2 cup butter
1/2 cup sunflower oil
3/4 cup sugar
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup buttermilk/yougurt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup cocoa powder
1/4 cup chocolate chips
1 zucchini , shredded
1/2 teaspoon salt

Method:
Preheat oven to 180 degrees . Lightly grease a 9″ cake pan.
In a mixing bowl , beat together butter , oil and sugar . Add in vanilla , baking soda , baking powder and salt. Whisk until smooth.
Stir in buttermilk and sifted flours alternatively.Add cocoa powder and chocolate chips , fold in zucchini.Spoon the batter into prepared pans.

Bake the cake for 30-35 minutes.

To Ice the cake
Slide the cake out from the oven and sprinkle evenly the chocolate chips, return it to oven for 5 minutes.
Remove cake from oven , spread the chocolate chips with spatula,cool on wire rack.

Slice and serve.

Serve -6 Baking time-35 minutes
