Afghanistan ~ Kabuli Pulav /Kabuli Palaw

We are in the nesxt edition of one month long mega marathon. With the huge success of our previous mega marathons A-Z series and A-Z Indian States Cuisine ,this would be our third mega marathon and the theme for this journey is Around the World in 30 days . This means we have to cook alphabetically from countries around the world. Isn’t it interesting ?

Well for the first day I landed my plane in our neighbor country Afghanistan and made this vegetarian version of Kabuli Pulav . The cuisine of this country is based on staple crops like wheat,barley , rice and maize alongwith fruits and vegetables. Kabuli Pulav is the national dish of Afghanistan in which meat and stock added, topped with fried raisins, slivered carrots, and pistachios.

So let’s start the recipe .yum

Ingredients:
For rice

500 gm basmati rice
3-4 peppercorns
2 green cardamom , crushed
3-4 cloves
1 teaspoon salt
1 teaspoon oil
Water as required

For Mushroom
250 gm button mushrooms
2 onions chopped
2 tomatoes, chopped
1 teaspoon red chilly powder
1 teaspoon coriander powder
2 teaspoon garam masala
Salt to taste
2 tablespoon oil

Other ingredients:
1/2 cup golden raisins
1 cup diced carrots
1 tablespoon cashew nut /almonds
1/4 cup butter
1 teaspoon Garam masala
salt to taste
Water as required

Method:
For Mushrooms:

Wash and slice mushrooms . Sprinkle a teaspoon of salt and 1 teaspoon garam masala and let it marinate for half an hour.
Heat oil in a pan and add onions . Sauté for a minute and add tomatoes , red chilly powder , salt, coriander powder and a teaspoon of garam masala.
Cook till tomatoes are tender and then add marinated mushrooms.Cook for 5-7 minutes and set aside.

For carrots and nuts :
Heat butter in a pan and fry the golden raisins , carrots , cashews and almonds.
Pack the fried nuts and carrots in an aluminum foil bag till further use.

For rice :
Wash and soak basmati rice in 2 cup water .Boil 2 cup water in a vessel.Add peppercorn , cloves , and cardamom . Add salt and oil.
Now add the washed rice and let it oil till partially cooked.
Drain excess water and set aside.

Arranging:
Now melt butter in a pan , add a layer of partially cooked rice over it. Sprinkle some salt( if needed )and fried carrots and nuts and top it up with a layer of mushrooms and its gravy.
Repeat the same procedure re two -three times till all the rice and mushroom are arranged.
Lastly top with carrots and nuts , sprinkle some garam masala and cover it with aluminum foil. Let it cook on simmer for 15-20 minutes.
Remove from heat and mix the mushrooms with rice using a fork.

Serve hot .

  1. Sapana, I was going to say even I made it until I saw the carrots wrapped in aluminum wrap. That is when I checked the recipe you followed. Thanks for trying the recipe and linking back.

    So, looks like it is Kabuli Pulav day! Pulav looks delicious.
