Sabudana Vada (+Video)

A very delicious and super easy crispy deep-fried sabudana vada made with sago pearls, potatoes, roasted peanuts, and spices.

What is Sabudana Vada?

Sabudana vada is quick and easy deep fried vada made with tapioca pearls. In Hinduism, sago pearls are considered to be an acceptable source of nutrition during fasting or any other religious activities.

Besides its sacred role, sago consists of a huge amount of carbohydrate and a little amount of protein, minerals, and vitamins. So it gives a lot of energy while fasting and keeps us satisfied. We usually make sabudana kheer, sabudana khichdi , Sabudana Vada, Sabudana Papad, etc. from sago pearls.

Basic Ingredients for Sabudana Vada

The basic ingredients to make the sabudana vada are listed below.

  • Firstly, Sabudana/tapioca seeds-Medium-sized sabudana will be good for the recipe.
  • Potatoes-boiled and mashed potatoes are needed in the dish.
  • Roasted peanuts-Dry roast the peanuts to make them slightly crispy.
  • Green chilies-Use finger chilies finely chopped as per your taste.
  • Ginger-A dash of grated ginger to make it more flavorful.
  • Lemon juice-To add some tanginess to the vadas.
  • Coriander leaves-Freshly chopped coriander leaves for some color and flavor.
  • Cumin seeds-A teaspoon of cumin seeds for some added crunch and taste.
  • Red chili powder-Use as per your taste or you may skip it.
  • Coriander powder-Homemade coriander powder tastes better but storebought will be fine too.
  • Rock salt -Replace with regular salt if not making for fasting.
  • Oil -For deep frying the sabudana vada.

How to make Sabudana Vada?

It is super easy to make the vada, you’ll need to gather all the ingredients and combine them in a mixing bowl except the oil. Once done make some lemon -sized balls from the mixture and flatten to shape as patties.

Now deep fry in medium hot oil until golden and crispy both sides, drain and serve with chutney.

Serving Suggestions

Serve the delicious vadas with mint chutney, tamarind chutney and or raita.

Ingredients
  

  • 1 cup sago pearls/sabudana/tapioca
  • 2 potatoes boiled and mashed
  • 1/4 cup peanuts roasted and crushed
  • 2 green chillies chopped
  • 1 teaspoon ginger grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chilly powder
  • salt to taste/rock salt/sendha namak
  • 1 teaspoon lemon juice optional
  • 1/4 cup coriander leaves chopped
  • oil for frying

Instructions
 

  • Wash and soak sago pearls in enough water just to cover for 3-4 hours or overnight. Wash again under running water till clear water appears. Blitz the roasted peanuts and grind to make them slightly crushed.
  • Take drained sago in a bowl, add peanuts, green chili, ginger, salt, cumin seeds, coriander powder, garam masala, red chilly powder, lemon juice, coriander leaves.
  • Add mashed potatoes and mix all the ingredients. Make small patties of equal size.
  • Heat oil in a wok on medium-high and deep fry the patties from both sides till crispy and golden.
  • Drain on the paper towel and serve warm with mint chutney.

Notes

  1. Adjust the amount of chilli as per your taste.
  2. You may shallow fry the vadas as well.
  3. Make sure the oil is hot otherwise the vadas might open in the oil.
