Tamarind Chutney

A complete, easy and multipurpose preparation from tamarind and jaggery . Can be eaten with pakoras, bread rolls, dahi bhallas ,dhokla or even with chapatti or bread when you have no time to cook. As a popular Ayurveda herb tamarind is used in gastric disorder and indigestion. So a combination with jaggery and tamarind will surely be a healthy preparation.Try it once and it  will make you crave for it again. Ready for an easy and ready to eat preparation. Tamarind Chutney

Ingredients:
Tamarind pulp or seedless tamarind-1 cup
Salt to taste
Jaggery(beaten)-1/2 cup or 1/2 cup sugar
Fennel seeds-1 tsp
Ginger powder-1 tsp
Red chilly powder-1/2 tsp
Musk melon seeds-2 tsp
Raisins-2 tsp

Method:
Add 2 cup of lukewarm water in seedless tamarind and keep aside for 2 hours.Skip this if taking tamarind pulp.

Take out seeds, clean the pulp .Add the pulp to a pan with 2 cup water.

Bring it to boil for 10 minutes.Add salt,red chilly powder and fennel seeds.Stir for 2 minutes.

Now add pound Jaggery or sugar in it and allow it yo cook for 15 minutes.

Remove from heat and add raisins, musk melon seeds .

Let it cool and store in refrigerator.

Serve-5. Cooking time-30-40 minutes.
