Sago Payasam /Sabudana Kheer
Sabudana Kheer /Sago Payasam is one famous desert prepared all over India during Fasting and Religious ceremonies.For the fifth day of Navratri my preparation is this simple and delicious pudding . It is rich and creamy delicacy with lots of nuts and a worth to try while you are fasting. So let’s start the recipe . Yum
1 cup sago /Sabudana pearls
2 cup milk , full cream
2 cup water
1/4 to 1/2 cup sugar
2 green cardamom , crushed
1 teaspoon almonds , sliced
1 teaspoon cashew nuts , broken
1 teaspoon raisins
1 teaspoon Foxnuts , broken
2 teaspoon clarified butter
10-12 threads Saffron
Soak saffron stands in 2 tablespoon lukewarm milk and set aside.
Wash and soak sago pearls in 1 cup water for 4-5 hours . Rinse under running water till clear water runs through sago pearls.
Heat 1 cup water in a vessel , add drained sago in it and let it boil. Slow down the flame and add 2 cup milk and crushed green cardamom . Let it cook on low to medium heat for 10-12 minutes with frequent stirring. Add sugar and cook again for 5-7 minutes.
Add saffron milk , stir and cook for 2-3 minutes more. Remove from heat and set aside.
Heat 2 teaspoon clarified butter in a pan , add chopped nuts , sir and pour over the cooked kheer. Mix well and serve hot.
Enjoy hot or chilled !
Serve-4. Cooking times – 30 minutes
Notes: Soaking of sago pearls is must to make delicious payasam .
You may increase or decrease amount of milk as per your desired consistency of payasam.
Please add sugar as much you prefer. You may serve it as chilled desert also.
