Mixed Veg Curry

Mixed Veg Sabzi/Curry

Mixed vegetable curry is a very popular vegetable side dish served in resaturants, and parties. This is one underrated veg curry which definitely needs some lifting up. I for one is a huge fan of mix veg curry and love it when paired with paratha and raita..

But whenever there are other maincourse gravy dishes along with mix veg, people often are reluctant to even try it. However if served alone it is quite preferable for many.

Toady’s recipe is very simple way to make restaurant style mixed veg sabzi at home and believe me you will totally love it if you try making it once.

Basic Ingredients for Mix Veg:

The basic ingredients to make mix veg curry are listed below.

  • Firstly, Mixed Vegetables-As the name of the dish says to use your favorite variety of mixed vegetables. I like adding cauliflower, carrots, green beans, bell peppers, cabbage, potato, and green peas.
  • Spices- WE only need four basic spices, turmeric, coriander, garam masala, and green chili.
  • Dry Fenugreek leaves-Adds a nice flavor to the mixed veg curry.
  • Tomato, Onion and Ginger-We need them to make gravy base.

How to make mix veg curry?

To make mix veg curry, first wash and chop all vegetbales. Now heat oil in a wok and deep fry tjhe vegetables. while veggies are frying you can cook the tomato onions until soft to make the gravy paste.

Once all veggies are fired and the tomato onion ginger paste is ready all you need to do is saute the paste, add spices and cook until oil separates from it. Finally, add the fried vegetables in the gravy, and cook for a couple of minutes more. Adjust the consistency by adding more or less water. Remove from heat and add chopped coriander leaves.

Serving Sggestions:

Serve the mixed veg curry with plain paratha, roti, rice and raita.

Ingredients
  

  • 1 medium-sized carrot chopped
  • 2 potatoes cubed
  • 1/4 cup peas fresh or frozen
  • 1 bell pepper cut in cubes
  • 1 cup green beans cut in small pieces
  • 1 cup cauliflower florets
  • 2 to matoes chopped
  • 2 onions roughly chopped
  • 2 green chilies chopped
  • 1 teaspoon ginger grated
  • 1/2 teaspoon dried fenugreek leaves
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon coriander powder
  • salt to taste
  • 1/4 tablespoon oil

Instructions
 

  • Heat oil in a pan. Deep fry all the vegetables one by one starting with potato and carrots together, then fry cauliflower and green beans and finally deep fry peas and capsicum. Keep the fried vegetables aside in a bowl
  • Into the same wok add tomatoes, onions, ginger, and green chili and saute until they are soft.
  • Remove from wok using a slotted spatula and make a ground paste in blender. Make sure it is cooled before grinding.
  • Now again back to the same pan, add cumin seeds, fenugreek leaves and stir.
  • Saute for a minute and add the tomatoes puree.
  • Add all the spices and salt, stir for a few minutes until oil separated from the sides of the pan.
  • Finally, add all the deep-fried veggies. Stir and cook for few more minutes, until vegetables combine well with tomato onion gravy.
  • Add chopped coriander and serve hot with chapati.

Notes

Use your favorite mixed vegetables.
If you don’t prefer deep frying the veggies just steam cook them a bit before adding to the gravy.
