Butternut Squash & Potato Sabzi

We are in next edition of CCChallenge and here is my post for the same. This is a simple version of my MIL’s potato pumpkin curry. Here I replaced pumpkin with butternut squash. This would be perfect side dish for roti and Poori as well. So let’s start the recipe . Yum

Ingredients:
1 cup butternut squash, cubed
2 potatoes, cubed
1 onion , chopped
1 teaspoon ginger, grated
1 teaspoon cumin seed
1 teaspoon red chilly powder
1 teaspoon turmeric powder
1 coriander powder
2 teaspoon amchur powder
1 teaspoon garam masala
Salt to taste
2 tablespoon oil

Method:
Heat oil in a pan , add cumin seeds and ginger. Stir for 1-2 minute.
Add onions , stir and add squash and potatoes in it.
Cover the lid and cook for 7-8 minutes , stirring frequently.
Add all spices and salt , mix well and cook again for 5 minutes till potatoes and squash are tender.

Remove from heat and serve hot with Paratha and roti.

Serve-3. Cooking time-20 minutes
