Minestrone Soup

Minestrone Soup,a hearty and filling soup cooked with vegetables,beans and macaroni pasta.I had bookmarked it from Rajani’s blog and tried immediately when she posted it.Those days we were on a nonstop soup marathon and I was cooking one soup everyday.My family loved this mild and filling soup.It makes a perfect light meal or a light lunch for those lazy days when we do not want to cook full meal.


Rajani blogs at My Kitchen Trials and she is an awesome blogger.I love the way she writes the post and her pictures always tells a story.I also like her creativity and sense of humor.If you happen to visit her blog you would also fall in love with her thoughts and not to forget the wonderful recipes.

Ingredients:
1 cup red beans,canned or cooked
1/2 cup macaroni pasta
1 onion,chopped
2-3 garlic cloves,chopped
1 celery stick,chopped
1 carrot ,chopped
2 tomatoes,chopped
1 teaspoon dried oregano
1 teaspoon dried basil
salt to taste
peppercorn to taste
4-5 cups veg broth or water
1 tablespoon olive oil

Method:
Cook macaroni as per package instructions.Drain and set aside.
Heat olive oil in a pan and add garlic and onions.Saute till light brown in color.
Add chopped celery,carrots and tomato.Cook covered until vegetables are tender.
Now add broth ,cooked beans,macaroni,salt,oregano,basil and pepper.Cook for 10 minutes more.
Season with more salt and pepper if required.

Serve hot with croutons or french bread toast.

Serve-6 Cooking time -30 minutes
