We are in the first week of BM#34 and I have selected “Mess Free Tiffin Box “theme as it is the first thing I do on every morning . My morning starts with preparing tiffin box for my daughter and my hubby . They both have opposite liking when it comes about lunch box and I have to prepare different items for them . Like if one is asking for Stuffed Paratha and the other must be imagining Brinjal sabzi , Chapati and Raita . Oh ! it is so hectic but I do enjoy preparing it for them .Let’s get back to our theme for that I have made Sandwich .I like to make Mint chutney sandwich , whenever I have mint chutney in my refrigerator. I have added lots of veggies, cottage cheese and few mild spices and my daughter loved them in her tiffin box. So let’s start the recipe . Yum

Ingredients:
8 slices sandwich bread
2 tablespoon Butter
1/2 cup Mint-Coriander Chutney
1/4 cup tomato ketchup
1/2 cup paneer , thinly sliced
1 capsicum , sliced
2 tomatoes , sliced
1 large onion ,sliced
1 spring onion , chopped
1 carrot , sliced
2-3 green chillies , chopped
1 teaspoon Chaat Masala
1/2 teaspoon Fresh ground pepper
Salt to taste
Method:
Heat olive oil in a pan ,add onion , sauté and add all veggies , chaat masala , salt and pepper. Mix well and add paneer , give a stir and set aside.
Toast the bread slices and Apply butter on all the slices of bread , Now spread a generous quantity of Mint-Coriander Chutney and tomato ketchup on each slice to cover entire slice.
Arrange veggies over the slices as per your choice and Cover with the top slice. Repeat the same method with remaining slices.
This sandwich tastes equally good toasted or not.
Cut in half and serve .
Serve-4. Cooking time -10 minutes
Notes: You may toast the bread slices before applying chutney and veggies .
