Boondi Raita

Raita is generally a prepartion of yoghurt with various variation from mixing chopped vegetables, pulses, fruits or with spices. Boondi Raita is popular in North India where it involve mixing of pear shaped fried gram flour balls in youghurt seasoned with cumin seed powder and carom seeds. Really a low fat preparation and good for digestion. A very healthy and nutritious preparation can be served with pranthas, veg pulao, biryani and taste awesome.Normally boondi are available in market but crazy me ,I always preferred home made. Be ready for a perfectly delicious experience. So let’s start the recipe. Yum


Ingredients:
Yoghurt-2 cup

Min leaves (dried or fresh)-2 tsp
Roasted cumin seeds powder-1 tsp
Red chilly powder-1/2 pinch
Salt to taste
Rock salt-1/2 pinch
For Boondi:
Gram flour-1/2 cup

Salt -1/2pinch
Red chilly powder-1/2 pinch
Carom seeds-1/2 pinch
Oil-2 cup for frying
Method:
Take all the ingredients for boondi in a bowl. Add 1/4 cup water and whisk it thoroughly to avoid lumps.

Heat oil an a pan. Take 1 tsp of boondi batter and pour it over slotted spoon .

Allow the batter to fall gently into oil in the form of small pearl like balls.

Fry for 2 minutes and drain on paper towel.

Take a bowl of water , add boondi in it and leave for 10 minutes.

Now take whisked yoghurt in a bowl.

Add cumin powder,salt,chilly,rock sal and mint leave in it,mix well

Squeeze excess water from boondi and add in the yoghurt prepared above.

Mix all ingredients together,and refrigerate.
Serve chilled with main course.

Serve-3. Prep time -10 minutes (20 minutes for boondi)
