Xpress Thumbrint Cookies

Thumb print cookies are the famous cookies of America , baked with vanilla and the thumb depression made is filled with any kind of jam . Originated in Sweden and known as Hallongrotta which means ” Swedish Cave ” . I saw this recipe and just fell in love with this easy and innovative way, like I never heard of cookies without baking . These cookies were amazingly tasty and nutritious too.

Ingredients:3/4 cup dates , pitted1 1/2 cup oats1/2 cup coconut , shredded1 cup almond butter , melted1 teaspoon orange extract1/4 teaspoon salt1/2 cup fruit preservative /jam
Method:
Place dates in a pan covering with 2 cups of water , let it warm a little . Take out the dates , reserving the liquid . Puree the dates along with liquid until smooth.
Pulse the oats flakes in a food processor and add in a bowl.Add coconut , orange extract , almond butter , and salt.

Add date mixture and mix to knead a smooth dough. Make 24 balls from the dough , arranging them in a tray .Make an indentation with thumb and spoon a bit of fruit jam in each . Chill out for 1 hour before serving.

Serve with milk and enjoy !



Serve-24 cookies. Prep time -15 minutes

Note: You may add almond butter the Vegan version.
