Khichdi Fritters

I had some khichdi leftover from last night dinner that no one would wanted to eat.So for the morning breakfast,I turned the khichdi into nice and crispy fritters.The only trick is to double fry them to get the crunchy texture.

This is my entry for the last day of showcasing bite size appetizers.So let’s start the recipe.yum

Ingredients:
1 cup leftover khichdi
1 onion,chopped
2 green chilli ,chopped
few coriander leaves,chopped
1 teaspoon cumin seeds
1 teaspoon garam masala
1 teaspoon red chilli powder
salt to taste
1/4 cup corn starch
oil for frying

Method:

In a mixing bowl , mix all the ingredients except oil.Make a firm dough like consistency.
Heat oil in a pan .Make small round balls and fry in hot oil till golden from both sides.
Drain on absorbent paper .Fry again in oil for 2 minutes to get the crispier crust outside.
Drain on paper towel and serve hot with chutney.

Serve-4 Cooking time-20 minutes

Notes:
Make sure to keep the leftover khichdi in refrigerator for few hours to get it firm.
Fry the fritters twice for crunchiness or else it will be soft.
Add corn starch as per need to make firm round balls.
Add salt carefully as the khichdi itself is salted.
