Super easy and very delicious stuffed okra also known as bharva bhindi is a wonderful dish to enjoy with flatbread.
Bharva Bhindi
Bharva bhindi or stuffed okra is a popular north Indian side dish that goes well with roti or paratha. I often make it as my family is crazy for bhindi and they can have bhindi any time in any form.
Bharwa bhindi is very easy to make. You just mix the spice powders, stuff the bhindi, and shallow fry in little oil. There you have a deliciously stuffed okra ready to eat.
Ingredients Needed For Bharva Bhindi
- Bhindi: Fresh ladyfinger/okra washed and pat dried. Make sure to dry the okra properly.
- Spices: A combination of turmeric, coriander, garam masalaa, red chilli powder, and dry mango powder along with salt.
- Oil: To stir fry the bhindi.
How to make Bharva Bhindi?
Step 1. Stuff the Okra– Mix all the dry spices and salt in a bowl and keep aside. Wash and pat dry okra with the kitchen towel.
Slit Vertically from the center and fill the masala in it with the spoon. Repeat the same with the remaining okra and green chilly.
Step 2. Stir fry the Okra– Heat oil in a pan and add the stuffed okra. Stir-fry for 20 minutes or till the okra becomes tender and crispy. Serve hot with roti or paratha.
Serving Suggestions and Variations
Serve the bharva bhindi with Chapati, bread, or paratha. For variations you can also use some small baby onions, stuff them with the spice mix and cook along with the okra.
Pro Tips
- Adjust the spices as per your taste preferences. The recipe instructions for spice mix would be enough for around 500 gms of bhindi.
- Make sure to wash and pat dry the okra. If the okra is not dried well it may become sticky while cooking.
- Mango powder helps to remove the gluey texture of okra, don’t skip it. If you don’t have mango powder you can add few drops of lemon juice while cooking the bhindi.
- You can also stuff small baby onions and add them to the dish along with stuffed green chilies.

Ingredients
- 500 g okra/bhindi/ladyfinger
- 4 green chilli
Spice Powders:
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chilly powder
- 1 teaspoon dried mango powder
- 1 teaspoon garam masala powder
- salt to taste
- 4 tablespoon oil

- Mix all the dry spices and salt in a bowl and keep aside.
- Wash and pat dry okra with the kitchen towel.
- Slit Vertically from the centre and fill the masala in it with the spoon. Repeat the same with remaining okra and green chilly.
- Heat oil in a pan and add the stuffed okra. Stir-fry for 20-25 minutes till the okra becomes tender and crispy.
- Stir ocassionally to avoid sticking at the bottom of the pan.
- Serve hot with roti or paratha.
