Millets Vada

Millet Vada is a variation of regular vada made with the combination of urad dal and millets. This is a wonderful recipe for lunch or dinner.

Millets are the healthy option when you are trying to go on the low-carb diet and what could be better than to use them in regular meals. Frankly, when I first tried a simple millets khichdi my daughters did not even touch the khichdi.

I knew I had to find another way to use millets in our diet and hence started making dosa, idli and millet vada with them.

These millet vadas are very crispy and taste amazing with sambhar or tomato onion chutney. So last weekend we had a nice South Indian style dinner.

Millets Vada

A healthy and tasty vada made with millets and urad dal. This makes a nice variation of the regular vada and tastes crispier too.

Ingredients
  

  • 2 cups urad dal/split black gram
  • 1/2 cup foxtail millets
  • 1 teaspoon cumin seeds
  • salt to taste
  • oil to deep fry
  • water as required

Instructions
 

  • Wash urad dal and millets in water for a couple of times and soak in enough water for 2 to 6 hours or overnight.
  • Once soaked grind dal and millet into a smooth yet slightly coarse paste using a blender or food processor.
  • Add cumin seeds and salt into the batter and mix well until combined.
  • Heat oil in a pan or wok and make vada by applying some water on your fingers. 
  • Make a dent in the centre and deep fry the vada into hot oil until golden from both sides.
  • Remove fried vada on paper towel. Serve and enjoy.

Notes

You can also fry the vada in the paniyaram pan to make them guilt free treat.

  1. what a lovely spread that is, Sapana ! loved the idea of making vada with millets – we make idli and dosa with them, but vada is a definite winner ! thanks for sharing 🙂

  2. What a lovely recipe. I’, trying to include millet in our diet, I love millet khichdis but hubby would prefer different varieties. He will definitely like these vadas.
