Bhindi Masala

Bhindi Masala, is perfect for the changing weather as markets are full of luscious vegetables.Yesterday I bought some fresh green okra and prepared our family favorite quick and tasty recipe.

This is as all time favorite in summers and the main plus point I loved about this recipe is ,it can be ready to eat in few minutes.Usually popular for nutritional value okra is slimy in texture but this mucilaginous feature may be replaced by adding any citrus ingredient.


Ingredients:

250 gm Okra/bhindi,chopped
1 onion,finely chopped
2 green chillies,chopped
1 tomato,chopped(optional can be replaced with a tsp lemon juice or amchur powder)
1/2 teaspoon turmeric powder
1 teaspoon red paprika
1 teaspoon coriander powder
salt to taste
2 tablespoon olive oil
1 teaspoon garam masala

Method:
Heat oil in a kadahi and add chopped onions,stir for 1 minute till it becomes translucent and quickly add chopped tomatoes.(skip this if you are choosing lemon juice or amchur powder).
Add chopped okra stir and let it cook for 5 minutes.Now add all spices and salt,mix well and cook for 2 minutes till oil comes out.(Add amchur powder with spices or lemon juice after spices if you are not opting for tomatoes).
Remove from heat and garnish with garam masala.(Don’t over cook it as it will diminish all flavor).
Serve hot with paratha,chapati,rice or as bread topping.

Serve-3. Cooking time-20 minutes
