Ingredients
  

  • 250 gm / 2 Cup Amaranth Leaves chopped
  • 1 medium Onion chopped
  • 2 Green Chilli chopped
  • 5-6 Garlic cloves
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon red chilly powder
  • 1 teaspoon amchur powder/dried mango powder
  • salt to taste
  • 2 tablespoon vegetable oil/clarified butter

To temper:

  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon chana dal/split Bengal gram
  • 1 teaspoon urad dal/split black gram
  • 4-5 curry leaves chopped

Instructions
 

  • Heat a non-stick pan and add oil. Once the oil is hot add the ingredients under "To temper".
  • Add chopped onions and garlic and green chilly. Saute for 2 minutes.
  • Add chopped amaranth leaves, turmeric powder, red chilly powder, amchur powder and salt. Mix it well. Cook for 5-7 minutes and remove from heat.
  • Serve hot with Plain Rice, Chapati or Paratha.
