Vermicelli or Seviyan in Hindi are small sized noodles used in a variety of dishes including Seviyan kheer , Seviyan Upma , Seviyan Pulav etc. In some parts of North India hand made vermicelli are enjoyed with a dough made of All purpose flour. Ladies used to sit together in groups like a festival gathering and make these tiny noodles with hand. My family loves the sweet as well as savory version. I prepared the spicy pulav from hand made vermicelli with lots of veggies . So let’s start the recipe .yum
Ingredients:
2 cup vermicelli
1 onion , chopped
1 capsicum chopped
1 carrot , chopped
1/2 cup beans , chopped
1/2 teaspoon carom seeds
Spices
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon red Chilli powder
Salt to taste
4-5 curry leaves
2 tablespoon vegetable oil
4 cup water or as required
To be ground
2 tomatoes
4 green chillies
20 gm Coriander leaves
1 small piece ginger
3-4 garlic cloves
Method:
Make a paste of ingredients under “To be ground ” and set aside.
Heat a pan or wok , dry roast the vermicelli for few minutes , remove from pan and set aside.
Add oil to the hot pan followed by carom seeds, as they splutter add onion and curry leaves and sauté till light golden in color.
Add chopped veggies and the paste made above , mix well .
Now add all spices and salt , mix and add 4 cups of water . Let it cook for 7-10 minutes till veggies are tender.
Add roasted vermicelli , cook for another 5 minutes till all spices and veggies mixed with vermicelli and all water evaporates.
Remove from heat and serve hot.
Serve-3. Cooking time -20 minutes
Note: You may add pre boiled vegetables instead of raw.
Add salt and chilly as per your taste.
