Veggie loaded Lasagna

For the second day of cooking vegetarian Italian dishes for dinner,I made vegetable lasagna for our dinner. Since few days I have been very busy.My brother and sister-in law are visiting us from Seattle . Every weekend we all are going to long trips without planning and enjoying the moments. This post was supposed to up on the 11th of July but due to my busy schedule,I was not able to post the same on time.

However,I made this lasagna for our dinner last week , even then it wasn’t posted on time. My brother has asked to make all the tasty recipes from blog for them. Every day I cook recipes from the blog and tasting them.

This is so fun to cook my favorite recipes again and getting all the praises.I am loving my life.So let’s start the recipe.yum

Ingredients:
1 package lasagna sheets
1 cup spinach,chopped
1/2 cup mushroom,chopped
1 cup zucchini,chopped
1/2 cup brocolli florets
2 cup bell peppers,chopped(red ,green & yellow)
1/2 cup scallions,chopped
1 onion,chopped
4 garlic cloves,chopped
1/4 cup parsley ,chopped
salt to taste
pepper to taste
4 cup pasta sauce
2 cup Parmesan cheese(I used mild cheddar )
salt to taste
Pepper to taste
basil to taste
2 tablespoon olive oil

Method:

Preheat oven to 180 degrees.
Heat olive oil in a pan , add garlic ,onion and scallions.Stir for a minute.
Now add all chopped vegetables and cook for 5-7 minutes.Place the veggies in oven for 5 minutes under broil to roast a little.

Remove fro broil , season with salt ,dried basil and pepper .Add parsley leaves and set it aside.

Take a glass baking tray and apply a layer of pasta sauce in it.Top it up with a layer of sauteed vegetables .Sprinkle a layer of cheese.

Now finally arrange a layer of lasagna sheets covering the vegetables.Cover the lasagna sheets with a layer of pasta sauce and sprinkle a layer of cheese on it.

Repeat the same steps alternatively until all the veggies , pasta sauce and sheets are used.

Bake in preheated oven for 40-45 minutes.
Remove from oven ,slice and serve warm.
