Vegan Chia Berry Pudding

Chia and berry pudding is a very delicious, and super easy no-cook vegan pudding loaded with seasonal berries. This pudding makes a filling and healthy breakfast to keep you satiated throughout the day.

Chia Berry Pudding

Chia seeds with berries compote make a nice and filling breakfast. This pudding is vegan, no-cook, and takes very little time to prepare if you keep it ready overnight in the refrigerator.

Chia pudding is a perfect grab and go breakfast for those busy days when you are out and about and don’t have time to cook.

Ingredients needed for chia pudding

  • Chia seeds: Black or white chia seeds
  • Almond milk: I have used almond milk but you could add any of your favorite plant-based milk.
  • Berries: Use your favorite berries or seasonal fruits.
  • Honey: For sweetener, I used honey, you could replace it with sugar, agave nectar, or maple syrup as well.

How to make Chia Berry Pudding

To make chia pudding, all you need to do is soak chia seeds in almond milk for few hours in the refrigerator, keep stirring in between.

Make the berries compote by muddling the berries with honey. Once the chia seeds are soaked completely and absorbed the milk they will puff and increase in size.

Add the berries compote and assemble in layers. Top with more berries, fruits and or nuts and serve chilled.

Alternatively, you could also cook chia seeds with almond milk for a few minutes and serve the pudding warm. Personally, I prefer the chilled chia pudding. It is more of dessert as breakfast for me.

Serving Suggestions and Variations

As I said earlier, serve this pudding as breakfast with your favorite smoothie or coffee and tea. For variations, you could use mango puree, peaches, plums, kiwi, or any of your favorite seasonal fruits. Top with sunflower seeds, pumpkin seeds, chopped nuts, and raisins.

Equipment

  • Mixing Bowls

Ingredients
  

  • 1/4 cup chia seeds
  • 8-10 strawberries
  • 1/2 cup blueberries
  • 2 cups almond milk
  • 2 tablespoons honey
  • To top
  • whiskey currants optional

Instructions
 

  • In a mixing bowl add the chia seeds, 1 tbsp honey, and almond milk. Mix well and let it rest in the refrigerator for about 2 hours.
  • Keep stirring in between to remove chia lumps formation.
  • Meanwhile, muddle strawberries and blueberries in a separate bowl with fork or back of a spoon.
  • Add the remaining honey in the berries and set aside.
  • Now divide the chia pudding in three portions, add strawberries compote in one, blueberry in another, and keep the third portion as it is.
  • Take some yogurt jars or small glass jars and arrange layers as per your choice.
  • Refrigerate and serve chilled.
  • Top with currants, chopped berries, or your favorite toppings.

Notes

  1. Adjust the sweetener as per your taste.
  2. Instead of honey, you could use agave nectar or maple syrup as well.
  3. You could replace berries with your favorite or seasonal fruits.
  4. For toppings add chopped fruits, nuts, seeds, and raisins, etc.
