Sambhar Masala Powder-A very basic blend of few spices and roasted lentils and is one of the most popular condiments in Southern India.
I always keep stocks of sambhar powder in my pantry as I often make it with rice or dosa. It’s been ages since I have bought it from the store as I feel the freshly roasted and prepared sambhar powder taste way much better in the sambhar or any other South Indian rice or curry.
Some people do not add turmeric powder in the sambhar masala and it is quite optional but I definitely like the bright yellow color it gives to the spice blend.

Sambhar Powder
Ingredients
- 1/4 cup chana dal
- 1/4 cup urad dal
- 1/4 cup coriander seeds
- 2 tablespoon peppercorn
- 2 tablespoon mustard seeds
- 10-15 dried whole red chillies
- 2 tablespoon fenugreek seeds
- 2 tablespoon cumin seeds
- few curry leaves
- 1/4 teaspoon aseftida
- 1 teaspoon turmeric powder
Instructions
- Heat a griddle or pan an dry roast the chana dal and urad dal on low to medium heat until slightly golden. Keep it aside.
- In the same pan dry roast peppercorn, mustard seeds, fenugreek seeds, cumin seeds, curry leaves and dried whole red chilies. Keep aside to cool.
- Once all the spices are cooled down grind them in mixer or coffee grinder along with asafetida and turmeric powder.
- Blend a couple of times until you get a fine powder.
- Store in airtight jars and keep in cool and dry place to store.

How aromatic and flavorsome this sambar masala powder will smells na.Freshly grounded spice powders are always the best.
Nothing beats the aroma of the freshly ground,homemade sambal powder.
That jar looks so good and I am sure the sambar turns out great…these days I tend to add this to other subzis as well…
Long back I used to make the sambar powder at home , but now my daughter sends me from Chennai ! Nothing like home made sambar powder , it has a beautiful aroma .
Home made sambar masala makes sambar so delicious. Store bought masalas stand no where in comparison to homemade. Addition of turmeric has made it look so vibrant

My version of sambar powder is fairly simple. The addition of turmeric gives the powder a lovely colour for sure..
