Ingredients Needed for Shahi Tukda
- Sandwich bread: White sandwich bread with corners cut. You can use whole whaet bread as well but the flavors really tatses amazing with white sandwich bread.
- Milk: Whole full fat milk.
- Sugar: To make the sugar syrup.
- Condensed milk: Condensed milk is optional but it adds a richness in the milk rabdi.If you want you can add sugar instead.
- Nuts: Any dried fruits and nuts of your choice like almonds,pistachios and cashew nuts.
- Saffron: Few saffron starnds to give a nice colo and flavor to the rabdi..
- Ghee: Home made or store bought ghee.
How to make Shahi Tukda
Trim the sides of the bread piece and cut in any shape of triangle or square (as you want).
Make sugar syrup by adding sugar in water and cardamom powder, let it boil for some time, and keep aside.
Heat milk in a pan, add condensed milk, cardamom powder, and bring to boil. Add saffron strands and cook till it becomes thick or reduced to 1/4 of the original.
Shallow fry bread pieces in clarified butter and dip in sugar syrup for some time. Remove on a plate add a spoonful of milk rabdi on each bread. Garnish with chopped nuts and serve.
Serving Suggestions
Serve the shahi tukda drizzled with rabri, dry fruits, and nuts of your choice. You can also pair it with vanilla ice cream.
Make sure to assemble the Tukda only when you are ready to serve. Keep the bread fried, rabri ready and for best results when you are ready to serve assemble the shahi tukda.
Pro Tips
- Make sure to deep fry the bread slices properly until they are crispy.
- Dip the bread inti sugarsyrup untilthey absorb it but not for too long aswe don;t want to make them soggy.
- Assemble the shahi tukda when you are ready to serve to avoid sogging.
- You can prepare the rabdi, fry the bread slices, soak them in sugar syrup and keep everything ready.
- Frying them in ghee makes the bread more flavprful but if you want you can make them vegan.
- You can skip using condensed milk and add sugar in the rabdi or thickened milk.
