Hyderabadi Veg Biryani

Hyderabadi biryani is a blend of Mughlai and Andhra Pradesh Cuisines and usually prepared with Basmati rice and meat. The vegetarian version of the biryani is prepared with potatoes , peas , carrots ,almonds and cashews and accompanied with Dahi or Salad. I got this recipe from Meena’s Homely food and can’t stop myself to try it.I prepared it with broken Basmati rice and veggies . Our house is filled with nice aromas of Whole spices , yoghurt , mint and Saffron . My family especially my mum liked this special version of Hyderabad instead of regular biryani or pulav. So let’s start the recipe.yum

Ingredients:
1 tablespoon ginger garlic paste
2 teaspoon biryani masala powder
2 teaspoon red chili powder
2 teaspoon Dried mango powder
1/2 teaspoon turmeric powder
1 cup yogurt,whisked
ghee or vegetable oil for frying
Few saffron strands
4 tablespoon hot milk to soak the saffron strands
1/2 cup almonds,raisins and cashews

Vegetables:
2 onion ,sliced
1 large potato chopped ,chopped
1 large carrot, chopped
1/2 cup green peas
2 tablespoon mint leaves ,chopped
2 tablespoon coriander leaves ,chopped
2 green chillies ,chopped

Whole Spices:



2 inch cinnamon stick
2 green cardamoms
1 black cardamom
1 star anise
4 cloves
4 Peppercorn
2-3 bay leaves
1 teaspoon shahi jeera

For Rice:



2 cup basmati/broken basmati rice
2 teaspoon oil or ghee
1/2 teaspoon cumin seed
salt to taste

Method:



Heat milk in a pan , remove from heat and add few saffron strands  in it . Keep aside.

Heat oil/ghee in a pan . Add onions and deep fry them till they turn bit brownish. Keep it aside.

Leave 4 tablespoon of oil in the same pan , add all dry spices except shahi jeera. Saute the spices for a minute till you get nice aroma.

Add jeera and saute again for a minute. Add ginger garlic paste to saute once again.

Now add potatoes and the rest of the vegetables. Fry for a minute or two.

Add turmeric, salt,red Chilli powder and biryani masala powder. Add half of the yoghurt to this and mix well.

Cover and cook for 2-3 minutes. Cook till the moisture from yoghurt evaporates.
Add some mint leaves, coriander leaves  and green chillies, mix well and keep this aside.

In a large pot, boil 6 cups of water and add salt, oil or ghee and shahi jeera. In this add soaked rice and cook it till 3/4th done. Drain off the excess water and keep rice aside.

In a large pressure cooker or pan, add half the vegetables which we made earlier. Add half of nuts and fried onions to this layer.

Add the remaining yoghurt . Layer half of the rice on this and again layer the rest of the veggies.

ο»ΏAdd the remaining fried onions and again layer with rice, nuts, mint leaves and coriander leaves.

Heat a tava and put the pressure cooker or pan whichever you used on top of it.
Add saffron milk and cover the pan with thick towels and put the lid on top.

Cook on medium heat for 10 minutes ,lower the heat and cook for 5 minutes more. It’s called dum or slow cooking.

Serve-3.  Cooking time -45 minutes



Note: You may add vegetables as per your choice.
