Rice Vermicelli Upma | Sevyian Upma

Upma is a common South Indian popular dish, cooked with various seasonings and vegetables are often added as per cooking preferences.I made vermicelli Upma with brown rice vermicelli for weekend brunch .It is very simple and easy to make and hearty and filling as well.This upma is perfect for mid morning cravings and healthy also.Normally I would prefer to roast the vermicelli before using but this time I followed the package instructions on rice vermicelli .My daughter loved it and asked to make again on next weekend.

Ingredients:
1 cup rice vermicelli
1 onion,chopped
2 green chillies,chopped
1 teaspoon ginger,grated
Few curry leves
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 teaspoon urad dal
1 teaspoon red chilly powder
A pinch asefetida
Salt to taste
1 tablespoon cashew nuts
1 tablespoon oil

Method:
Wash and soak rice vermicelli in enough water for 5-7 minutes.Drain and set aside.
Heat oil in a pan and add Asefetida ,cumin,mustard seeds.Stir and add urad dal and curry leaves. Sauté for a minute.
Now add ginger , green chilli and chopped onions .Fry the onions for few minutes.
Add salt and chilly powder and cashew nuts .Finally add rice vermicelli ,stir and cook for 10 minutes.

Remove from heat and serve warm.

Enjoy!!

Serve-2. Cooking time-20 minutes
