Basundi with Saffron and Gulkand-A rich, creamy and flavorful basundi is a sweetened milk dessert with chopped nuts and different flavorings. This dessert tastes heavenly when served chilled.

Basundi is the cousin sister of our humble Rabdi and tastes just as amazing as the later. It needs lesser time to cook and can make you feel just devoured by the amazing flavors.

I prefer to serve milk-based puddings and desserts serve chilled just like kheer and ras malai etc. Frankly, they taste more tempting right out of the refrigerator, isn’t it right??

So normally you can add any flavor like cardamom, saffron and rose and what not but this time I used three different flavors at one time and the result was just wow.

Here I used cardamom, saffron, and gulkand but did not add too much gulkand as don’t want to compromise the basic pale golden color of the dessert but a little was enough to get the exotic flavors in the dish.

Whatever flavor you use in this dessert it just tastes amazing and to tell you the truth I don/t know why but I prefer our Indian desserts of all the sweets and desserts in the world. Gulkand Basundi

A rich, creamy and flavorful basundi is a sweetened milk dessert with chopped nuts and different flavorings. This dessert tastes heavenly when served chilled.

Ingredients
  

  • 1- liter full-fat milk
  • 1/4 cup sugar
  • 2 green cardamom crushed
  • few saffron strands
  • few almonds sliced
  • few pistachios sliced
  • 1/2 teaspoon gulkand, optional

Instructions
 

  • Add saffron strands in 2 tablespoons of warm milk and set it aside.
  • Take a heat a heavy bottom pan and boil milk in it. Stir continuously with a slotted spatula. Add crushed cardamom in it.
  • Cook it slowly with frequent stirring till it starts a little bit thickening.Now add saffron milk, gulkand, almonds, and pistachios.
  • Add sugar to it and mix well. Remove from heat and cool it.
  • Serve chilled or warm.

Notes

Use the heavy bottom pan and stir continuously to avoid sticking the basundi on the pan.

  1. Basundi is such a versatile sweet from Gujrat ! We see so many flavours here that one can’t even imagine . We have the innovative versions like this one served as weddings and functions .
    Love the flavours in this basundi , such a exotic one ! Beautifully presented too .

    I’ve made Rabri only recently and absolutely loved how thick and rich it tasted. You are tempting to give Basundi a try some time soon. Adding gulkhand sounds like a nice twist to traditional taste.
