Rigatoni Pasta


We are in the second week of BM#54 and I shall be showcasing Vegetarian Italian recipes for Dinner.For the first day I made Rigatoni pasta with passata and broccoli.This is simple yet filling dinner recipe and full of exotic flavors as well.So let’s start the recipe.yum

Ingredients:
150 gm Rigatoni pasta
1/4 cup broccoli florets
1/4 cup courgette,sliced
1 white onion,copped
2-3 Red chillies,crushed
1 cup passata /canned tomatoes
3-4 garlic cloves,minced
salt to taste
peppercorn to taste
1 teaspoon basil
2 tablespoon olive oil

To serve
Parmesan cheese
Olives,sliced
Jalapenos,sliced

Method:
Boil pasta in enough water until done.Wash under running water and toss with 2 teaspoon of olive oil.Set it aside.
Heat olive oil in a pan , add garlic ,crushed red chilli and onion.Saute for a minute.
Now add broccoli and courgette .Stir and cook for 5-6 minutes.
Finally add passata and let it cook for 5 minutes more.
Season with salt and pepper.
Add cooked pasta , stir and cook for a minute.Garnish with Parmesan cheese and olives.
Serve hot.


Serve-2 Cooking time-20 minutes
